- 1 6-inch round wheel of brie cheese
- 1 sheet puff pastry (I use the frozen one found in the freezer section of the grocery store)
- 4 tablespoons melted butter
- 1 cup blueberry pie filling
- Zest from one lemon
How to Make Blueberry Baked Brie in Puff Pastry
Preheat the oven to 375°F.
Line a baking sheet with parchment paper and set aside.
Lay out the puff pastry sheet flat on a baking sheet or in a pie pan and roll it with a rolling pin so it is big enough to wrap the cheese around the wheel of cheese.
Trim the edges and save the extra pieces of excess dough.
Put the butter in a microwave safe bowl and melt the butter in 30 second increments until it is melted. Using a brush, brush the melted butter inside the puff pastry.
Place the brie with the rind on it in the center of the puff pastry dough.
Spread the blueberry pie filling on top of the brie and sprinkle the lemon zest on top of the pie filling.
Fold the edges of the puff pastry dough up over the top and seal well, using most of the remaining butter. Place the wheel of brie wrapped in puff pastry dough on the prepared baking sheet.
Use a cookie cutter to cut some of the left over puff pastry into shapes and place them on top. Brush the top well with the rest of the butter.
Bake in a preheated 375°F oven for 20-35 minutes.
Remove and let sit for at least 20 minutes before serving.
