There are so many variations of grilled cheese that it makes it super easy for me to change things up.

Can I make Grilled cheese sandwiches in advance?
Grilled cheese sandwiches are best eaten fresh. You can prepare the sandwich ahead of time, wrap tightly in wrap to prevent the bread from getting stale, and then fry just before serving. I do not recommend freezing Grilled cheese sandwiches.
What cheese goes well with Bacon?
For this grilled cheese bacon sandwich recipe I used provolone and colby jack cheese. You can also change things up and use American cheese, Monterey Jack cheese, sharp cheddar cheese, mozzarella cheese, or your favorite cheese. This recipe is so easy to change up with the cheese you have on hand because bacon goes good with just about any cheese.
What type of bread can I use for making grilled cheese with bacon?
The great thing about this recipe is you can use any bread that you have on hand. I normally have white, wheat and sourdough bread on hand so I use one of those.
Best ways to cook bacon
You will need to have cooked bacon when you are making this recipe. You can have the bacon at your preferred cooked way from extra crispy bacon to slightly crispy bacon, however, you prefer your bacon will work for this recipe.When you are going to cook the bacon you can do it by your preferred method of ovenbaked, air fried bacon, or on the stove top. If you want to have a sweet and salty sandwich then you can use brown sugar bacon.
Why do you use Mayo for grilled cheese?
Using mayo is better than using butter when you are making grilled cheese because it has a higher smoke point. It gives a crispier outside of the bread and makes it less likely to burn when you are cooking the sandwiches.
Tips for Making this recipe
- Cook on medium low heat. It might be tempting to turn up the heat to make things go faster, however, you do not want to cook grilled cheese on anything higher then medium low heat.
- Be Patient. It might be tempting to speed things up a bit, but doing so will end up with cheese that is not properly melted and bread that gets burnt.
- Making multiple sandwiches. If you are making multiple sandwiches at one time then you will want to use a large skillet so you have room to flip the sandwiches over while you are cooking them.
Can I add anything else to my sandwich?
We personally love ours with just bacon and cheese but if you want to fancy it up you can add cooked green bell peppers or red peppers, and onions are great add ons to this grilled cheese sandwich recipe.

Bacon Grilled Cheese Ingredients
- 2 slices of bread
- 3 strips of cooked bacon
- 2 slices of provolone cheese
- 2 slices of Colby Jack or Pepper Jack cheese
- 1 Tablespoon mayonnaise
How to Make Bacon Grilled Cheese
Cook the raw bacon using your preferred method and then place on a paper towel-lined plate to drain the bacon grease if needed.
Divide the mayo and spread onto one side of each slice of bread.
Then place one piece of the bread mayonnaise side down on the skillet.
Add the cheese and the bacon slices to the non mayoside of the bread in the pan.
Place the second piece of bread non-mayo side down on top of the sandwich.
Turn the skillet heat up to medium heat and cook for 3-4 minutes until that first side is golden brown.
Use a spatula and flip the sandwich over and cook for another 3-4 minutes until the second side is golden brown and the cheese melts all the way.
