Bacon Egg and Cheese Breakfast Sandwiches
Everyone in my house loves a good bacon egg and cheese sandwich but in the mornings we do not have enough time each day to make them fresh. My trick of making bacon eggs and cheese breakfast sandwiches and keeping the stocked in the freezer makes everyone have an easy breakfast that they love.
We pick a day when everyone has time and make large batches of breakfast sandwiches, pancakes, and waffles to have in the freezer so breakfasts are easy for everyone. We end up with a full assembly line in my house with some kids cooking while others are putting sandwiches together and others are wrapping them up so they can go in the freezer.
I like to make a variety of breakfast sandwiches for the freezer, including this bacon egg and cheese recipe we make Sausage Egg and Cheese Sandwiches, copycat McMuffin sandwiches, and bagel breakfast sandwiches.
Breakfast egg sandwiches are a great option for a brunch. You can prep eggs for a crowd with the different ways to cook eggs and then set out the sandwich toppings, meat options and let everyone make their own english muffin breakfast sandwiches.

Variations of this Recipe
Change up the Eggs. You can cook the eggs by your preferred method on the stove, or if you are making a large batch of breakfast sandwiches then you can use the sheet pan eggs, muffin tin eggs, oven baked scrambled eggs or sheet pan scrambled eggs recipe to make the eggs.
Change up the Cheese. I use American cheese most of the time but you can also use cheddar cheese, pepper jack or any other type of cheese that you like on your breakfast sandwich. I do not suggest using shredded cheese as it is harder to keep on the sandwiches, but you can use it if you want to.
Toast the English Muffins. If you are serving them right away toasting the english muffin makes for a great breakfast sandwich. I do not toast them before I freeze them if I am making breakfast sandwiches for the freezer. You can also use white bread English muffins or whole wheat English Muffins for this recipe.
Change up the bacon. I use pork bacon and depending on what I find on sale sometimes I use thick-cut and sometimes regular-cut bacon, but you can also use turkey bacon.
Tips for Making Homemade Breakfast Sandwiches with Bacon
- Use Fresh Ingredients. Start with fresh, high-quality ingredients to ensure the best taste and texture after freezing and reheating.
- Cook the eggs for your preference in yolk. If you prefer runny yolks when eating a breakfast sandwich cook them a shorter time than if you prefer them cooked all the way.
- Add sauces when you are going to eat them. It is best to add sauces like ketchup or hot sauce on the breakfast sandwich when you are going to eat them not before freezing them.
- Skip the skillet when you are making bacon and make air fryer bacon or oven baked bacon for easier clean up.
What to Serve with Breakfast Sandwiches
If you are looking for ideas on what to serve with breakfast sandwiches, here are some great side dishes that pair well with breakfast sandwiches:
- Fresh Fruit. Sliced melons, berries, grapes, or a fruit salad.
- Sweet Potato Fries. Baked or fried sweet potato fries offer a sweet and savory option.
- Hash Browns. Crispy and golden hash browns are a classic breakfast side.
How to Store Breakfast Sandwiches
You can premake the breakfast sandwiches and wrap them in plastic wrap and keep them in the fridge or you can store the eggs and sausage in airtight containers to make the sandwiches quickly in the morning. Breakfast sandwiches can be stored in the refrigerator for 3-4 days.
How to Freeze Homemade Breakfast Sandwiches
Wrap each sandwich tightly in plastic wrap and then wrap it with a layer of aluminum foil. Place the wrapped sandwiches on a baking sheet in a single layer. Put the baking sheet in the freezer for about 1-2 hours. This helps them freeze quickly and maintain shape. Transfer the frozen sandwiches into a freezer-safe bag or container. Label with the date and contents.
How to Reheat Frozen Breakfast Sandwiches
Microwave: Unwrap the sandwich from foil/plastic. Wrap in a paper towel and microwave for 1-2 minutes, flipping halfway through.
Oven Method: Preheat oven to 350°F. Place the unwrapped sandwich on a baking sheet. Bake for about 10-15 minutes or until heated through.
