This marshmallow easter egg recipe is one of our favorite Easter treats to make. We tend to make them at the same time as we are making our Forgotten Easter Cookies and our Chocolate Peanut butter eggs. Those 3 recipes are MUST makes every year for Easter.
Since there is a pause time in the process of making homemade marshmallow eggs I plan things ahead of time so that we can also dye eggs with shaving cream. That is the kids favorite way to color easter eggs and the mess is so much less then using the liquid egg dye coloring kits.

Tips for Making Chocolate Covered Marshmallow Eggs
Use quality chocolate. When making this marshmallow egg recipe you want to make sure that you are using a good chocolate. You do not want to use a cheap chocolate. My personal preference for melting chocolate is Ghirardelli Chocolate Melting Wafers.
Use unflavored Knox Gelatin. If you have never heard of it before, it is easy to find in most grocery stores. If you can not find it you can grab a box on amazon. You will need 3 packets of knox gelatin when making these easter eggs.
Use a metal spoon when making the egg molds in the flour. For this chocolate easter eggs recipe you do not need an extra mold. You will be making your own egg molds with flour and a spoon.
What is the best melting Chocolate?
I have found that bakers chocolate is the best chocolate to use. I stick with Ghirardelli and Godiva melting chocolate because I prefer the way they melt and the chocolate flavor they have.
When you are making them you can use dark chocolate, white chocolate, bittersweet chocolate, semi-sweet chocolate or milk chocolate. Ghirardelli Premium white chocolate Baking Bar or Ghirardelli Premium white chocolate melting chips.
For milk chocolate I like using Ghirardelli milk chocolate melting wafers. For dark chocolate i like using Ghirardelli dark chocolate or Godiva dark chocolate. If I am going to use colored melting chocolate I use the wilton colored melts.
How to Melt chocolate for dipping
There are two different ways to melt the chocolate. I suggest using the microwave way if you have kids making them. It is also important that you Don’t make the chocolate to hot. You want it to be hot enough that it is fully melted, but not so hot that it will melt the peeps.
Double Boiler Method. When you are melting chocolate for dipping the best way to do so is with a double boiler. You can buy a double boiler in the store but they are so easy to make at home with items you already have in your kitchen. Melt chocolate in the microwave. You want to use a microwave safe bowl and heat for 30 seconds at a time. In between each 30 seconds stir the chocolate and continue the pattern until the chocolate is melted and smooth.
How to Store Chocolate Covered Marshmallow Eggs
After making the chocolate covered marshmallows allow the chocolate to fully harden before storing. Then store in an air tight container. They will keep for about a week but they are best enjoyed with in a few days of making them.

- cold water
- granulated sugar
- corn syrup

- vanilla extract
- Powdered sugar for dredging

How to make Chocolate Covered Marshmallow Eggs
Pour flour into a deep pan about an inch deep.
Use a plastic egg or a real egg to press an egg shape into the flour. Then set aside your pan.
Now make your homemade marshmallows using the directions below.
How to Make Homemade Marshmallows for Marshmallow Eggs
You will want to use an electric mixer for making homemade marshmallows. With the electric mixer and in the bowl of the electric mixer add in the cold water. Then sprinkle the gelatin on top.
Let it sit and soak for 10 minutes.
Grab a small sauce pan and combine sugar, corn syrup, and 1/4 cup water. Bring the mixture to a boil and let it boil for 1 minute.
Pour boiling syrup into the gelatin mixture in your electric mixer. Then start your mixer on high speed and carefully add in the salt.
Allow the mixture to beat for 12 minutes, then add in the vanilla and allow mixing to incorporate it in to the mixture.
Once you are done making your marshmallow mixture, before allowing them too firm up scoop the marshmallow mixture into the flour egg molds you made with a greased spoon.
Get your hand wet and pat down the marshmallows to have a flat bottom.
Let your marshmallow eggs sit at room temperature for a few hours (2-3 hours) to set up.
Once they are set, carefully remove them out of the mold.
Using a paper towel dust off the extra flour.
Now you are going to melt your chocolate, follow the simple steps for How to Melt Chocolate in a Double Boiler and melt the chocolate.
If the chocolate is to thick for your liking, you can add a little bit of shorting to help thin it out.
Using a fork dip each one into the melted chocolate until they are completely coated.
Tap the fork on the edge of the bowl to remove the extra chocolate.
Place them on a cooling rack to cool and harden before eating.
