Are you a cookie person or a brownie person? My household is split pretty much down the middle and, honestly, I’ll take either one depending on the day! Love fudgy brownies then you are going to love these brownie cookies that are putting a tasty brownie into cookie form.
When I was pregnant, I had the BIGGEST chocolate craving. I swear I was in the kitchen every other day trying out some new chocolate dessert. There was one day I couldn’t decide between cookies and brownies, so I thought…why not combine them together?
The end result was these Chocolate Brownie Cookies. They taste like brownies but are in the form of soft, chewy cookies. Every bite is like biting into the corner piece of a brownie! (And we know corner pieces are the best!). This brownie cookie recipe is one of our family favorites and it results in I no one fighting for the edge of the brownies like they do when I make homemade brownies. Since then, I’ve made this chocolate brownie cookies recipe for a handful of occasions. I find them much less messy and more portable than brownies. Plus, if you’re a corner-piece person like me…well, you know there are only so many corners in a pan of brownies! With this brownie cookies recipe, you get a perfectly fudgy center, crackly tops, and that corner texture in every cookie! Seriously this is the best chocolate brownie cookies recipe evere!
And eating these cookies warm?! Divine! Definitely recommend eating these warm from the oven or popping them into the microwave for a few seconds before enjoying them. They’re amazing anytime but when they’re warm, they’re truly something special!

Variation of this Recipe
There are a few things you can do to make this brownie cookie recipe even more amazing. I like them as is, but sometimes I like to change up how I make the brownie cookie recipe by adding in some tasty add-ins.
Change up the chocolate flavor. I like using semi-sweet chocolate chips but you can also use dark chocolate chips or milk chocolate chips. If you want a dark chocolate brownie flavor then use dark chocolate chips, if you are more of a milk chocolate brownie lover then use milk chocolate chips.
Add nuts. You can add walnuts, pecans, or peanuts if you want to. Add 1/2 cup to 1 cup depending on how much you like nuts. Be sure to just fold it in at the end of making the cookie brownie mix and before you scoop the cookie dough onto the baking sheets.
Add chocolate chips or chocolate chunks. If you want to have chunks of chocolate in your brownie cookies you totally can add 1 cup of white chocolate chips, dark chocolate chips, chocolate chunks, to the cookie brownie batter. Be sure to just fold it in at the end of making the batter and before you scoop the cookie dough onto the baking sheets.
Add Chocolate Candies. If you want to add more fun you can totally add some M&Ms or Reece’s piece to the brownie mix. Keep it to about 1 cup of add-ins when you are making the cookies.
How to Keep Cookies Soft
If you’re not going to eat all of these fudgy brownie cookies in a day or two (which is totally possible in my house), you’ll want to ensure you store them properly to keep them soft.
The best way to keep freshly baked cookies soft is to transfer them to an airtight container as soon as they’re fully cooled vs leaving them on the counter for a while. Then, toss in a small piece of bread (half a slice or less). That might seem weird but it’s a true magic trick to keeping cookies soft!
Can I Freeze These?
Absolutely! Like both brownies and cookies, these Brownie Cookies freeze well. Allow them to cool completely, so there’s no extra moisture, then transfer to an airtight container or ziploc bag. I like to use ziploc bags because they take up less room and make it easier to just grab a cookie when I want it!
You can either let the cookie thaw on the counter or pop it into the microwave for about 30 seconds. The latter is my favorite because I LOVE eating these warm!
Brownie Cookies Ingredients
- 1/2 cup unsalted butter
- 12 oz semi sweet chocolate chips
- 1 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 3 large eggs
- 2 tsp vanilla extract
Brownie Cookies Directions
Add the butter and semi-sweet chocolate chips to a medium saucepan and melt over medium heat, stirring frequently until melted and mixed well.
Remove the pan from the heat and allow to rest until cool for 10 – 15 minutes.
In a large mixing bowl, add the flour, cocoa powder, baking powder, baking soda, and salt and whisk together to combine. Then set the bowl with the dry ingredients aside.
In the bowl of a stand mixer, add the light-brown sugar, granulated sugar, eggs, and vanilla and whip together with the paddle attachment on medium-high speed until pale and fluffy, which will take about 1 minute.
Using a rubber spatula stir the melted chocolate mixture into the sugar and egg mixture.
Working in 3 separate batches, add 1/3 of the flour mixture to the wet ingredients and fold just until combined.
Chill the bowl of cookie dough in the fridge for 45 minutes.
Preheat the oven to 325°F degrees during the last 10 minutes of chilling.
Scoop a tablespoon of the dough out and shape it into balls.
Place onto Silpat or parchment paper lined cookie sheets, spacing them 2 inches apart.
Bake the cookies in preheated oven 12 – 13 minutes, then remove from oven and allow to cool on baking sheet 5 minutes before transferring to a wire rack to cool completely.

These cookies are really good. I wasn’t paying attention when I started making them and melted 2 cubes of butter. I decided to double to recipe. The cookies freeze well.
