How to Make Zucchini Pizza Bites
Preheat the oven to 350 degrees F.
Wash the Zucchini and then cut them into 1/4 inch thick rounds If they are not perfect don’t worry they just need to be thin enough to cook quickly and thick enough that you can hold them without them flopping.
Once sliced, add the zucchini rounds to a large bowl, drizzle a little olive oil, just enough to help coat them, and sprinkle a small amount of salt and pepper on them. Mix well so they are all coated.
Line a baking sheet with parchment paper, a silicone baking mat, or aluminum foil.
Place the zucchini slices on the prepared baking sheet and then place them in the oven for 3 minutes. Remove the tray and flip them over and cook for another 3 minutes.
Remove the Zucchini from the oven and put the sauce, mozzarella cheese, and your favorite pizza toppings on top of the zucchini slices.
Place back in the oven for 3-4 minutes and cook until the cheese melts.
