Peppermint Bark Brownies
Homemade brownies are one of my favorite chocolate treats any time of the year. When the chill starts coming and the Christmas decorations start showing up I start enjoying peppermint bark as well. These homemade chocolate brownies have the perfect fudgy brownie base topped with a homemade peppermint bark topping that makes them perfect for holiday parties and just to enjoy at home.
There is just something about peppermint that starts the winter holiday cheer and the holiday season I. am totally ok starting it well before the snow hits the ground and many times I do by getting all things peppermint started long before the snow hits the ground. This homemade brownie recipe is one of the first things I make every winter season.
My whole family knows that these chocolatey brownies are going to show up as dessert once I feel the winter chill in the area. If we have a holiday party that I am assigned something chocolate, these amazing fudgiest brownie with a peppermint bark layer on top of the brownies is for sure making their appearance on the dessert table.
For these homemade peppermint brownies I combined my love of peppermint bark which I love turning into snowman shaped peppermint bark with my love of homemade brownies and can up with this amazing peppermint bark brownie that has the perfect rich fudgey brownie and the perfect peppermint flavor combo.

Tips for Making Peppermint Bark Brownies
Lining the pan with parchment paper. This will help you be able to get the brownies out easily.
Dip the knife in water for easy cutting. When it comes time to cut the brownies I dip my knife into some hot water than dry it off and slowly make my cuts, repeating as needed.
Cool brownies completely. As tempting as it may be to dive right in once they are done, letting them cool completely will make it much easier to cut and the brownies will not fall apart.
Melt chocolate with a double boiler. If you have never melted chocolate with a double boiler, read how to melt chocolate with a double boiler. You might be tempted to melt the chocolate in the microwave but that can burn the chocolate and harden it so the best way to melt the chocolate is with a double boiler.
Variations of this recipe
Change up the chocolate brownie flavor. I use semi-sweet chocolate to make the brownies, but you can also use milk chocolate or dark chocolate.
Change up the toppings. If you do not have peppermint candies then you can also use candy canes and crush them into pieces.
Making the homemade peppermint bark, I use white chocolate chips, but you can also use white chocolate candy melts instead.
Want a stronger Peppermint flavor? Instead of using vanilla extract to make the fudgy brownies, you can use peppermint extract.
What size pan do I need when Making brownies?
The size pan you use will depend on how thick you like your brownies. Regardless of the pan size, you will still end up with rich chocolate flavor brownies. You can use a glass pan or a metal pan and they will bake the same. 9×13 pan for thin brownies and 9 x 9 or 8×8 square pan for thick brownies.
How do you know when brownies are done?
When brownies are perfectly baked, the center of the brownies will look undercooked. As brownies cool they continue to cook, so you want to remove them before the center is fully cooked or you will have dry brownies.
To tell if the brownies are done cooking you want to stick a toothpick in the center, if it comes out with wet brownie batter then they need to bake longer. If it comes out with crumbs then it is time to remove the brownies from the oven.
Can I use boxed brownie mix?
You can! If you want to use a boxed brownie mix to make things easier you totally can, however, I love them best with homemade brownies and think they are even better when you use a homemade brownie mix but a boxed mix will still give you an awesome batch of brownies.
How to Store Brownies
Homemade brownies are best stored in an airtight container. Allow the homemade brownies to cool completely before putting them in a container. They will keep for about 3 days if stored properly.
Ingredients for Peppermint Bark Brownies
- unsalted butter
- semisweet chocolate squares
- granulated white sugar
- vanilla extract. You can use homemade Vanilla extract or store bought.
- eggs
- all-purpose flour
- salt
- white chocolate morsels. You can also use white chocolate candy melts instead.
- crushed peppermint candies. You can also use crushed candy canes instead.
Directions for Peppermint Bark Brownies
Preheat oven to 350°.
Line the bottom and sides of an 8-inch square baking pan with parchment paper and set aside.
In a large bowl, melt the butter and semi-sweet chocolate using a double boiler.
Once melted stir in sugar, then add the vanilla extract, and eggs and mix well.
Gradually stir in flour and salt until combined well.
Pour batter into prepared pan and bake for 30-35 minutes until toothpick inserted in the center of brownies come out clean.
Cool the baked brownies completely. It is important that you have fully cooled brownies.
While the brownies are cooling if needed use a rolling pin and crush your peppermint candies.
Once the brownies are cooled, melt the white chocolate in the double boiler.
Once the white chocolate has melted add in the crushed peppermint candies and mix well.
Pour the white chocolate and peppermint on top of the brownie layer and spread evenly on top of the brownies.
Place in refrigerator until top hardens.
Once the peppermint bark layer is cooled and hardened, use a knife to cut the brownies into squares and transfer brownies to an airtight container to store or onto a dessert platter to serve.
