Tips and Variations
Be gentle when beating the chicken. You want them to be thin but you do not want to damage the chicken and cause the chicken to split when you are beating it.
Use toothpicks to keep the rolls from falling apart.
Change up the cheese. I like to stick with the traditional swiss cheese but you can change out the swiss cheese for cheddar cheese or provolone.
Change up the meat. Use procuitto instead of ham, in this recipe if you want to.
Change up the bread crumbs. You can use Italian bread crumbs, plain bread crumbs or panko bread crumbs.
Hold the chicken roll tightly. When you are dipping the stuffed chicken roll into the bread crumbs hold it tightly so it doesn’t fall apart.
Place seem side down on the baking sheet. When you put the chicken roll on the baking sheet put it seem side down to help keep it closed while baking so none of the filling falls out.
How thick does the cheese need to be?
I go to the deli and get them to slice it thick for me but if you are using presliced swiss cheese you may want to use 2-3 pieces of swiss cheese for each one.
Storage instructions
Storing Leftovers. Leftovers need to be stored in the fridge in an airtight container in the fridge. Leftovers will keep in the fridge for 3-4 days.
Freezing. You can freeze them before or after baking. If freezing after baking, allow them to cool completely and then place on a baking sheet and put in the freezer. Once they are frozen (1-2 hours) remove from the baking sheet and wrap in plastic wrap and then place into a freezer bag. If freezing before baking place on a baking sheet and put in the freezer. Once they are frozen (1-2 hours) remove from the baking sheet and wrap in plastic wrap and then place into a freezer bag.
