The Best Pork Meatloaf Recipe
I know you probably hate whenever a recipe has a story with it, but I have to tell you this one just incase you have an “anit-meatloafer” in your house like I do.
Since we have been dating Tom has over and over told me about his distain for meatloaf. His mom apparently made meatloaf often and according to Tom it was “a pile of ground beef shoved into a bread pan, baked in the oven and had no flavor.”.
Over and over thru out the years I skipped making meatloaf loaf many time because of this or he would skip eating dinner. Once in a while he would eat a piece of meatloaf just to make me happy, but you could tell that even with added flavors it still brought him back to his moms meatloaf.
Easy Pork Meatloaf Recipe
Then I thought to myself that making meatloaf with ground pork would be a great way to change things up. I would get the meatloaf dinner I love and he would get away from the current thoughts on meatloaf.
The night that I first made this pork meatloaf Tom ate TWO pieces! I was quite shocked and totally did not expect that. I had planned on there being left overs for lunch the next day and between him and the kids devouring this easy meatloaf recipe there was 1 small piece of meatloaf left. From then on I doubled the recipe anytime I made it.
So I guess what I am trying to say is that if you have someone in your house who swears they do not like meatloaf, make this pork meatloaf. I bet their opinion on meatloaf will totally change!
