This homemade blueberry pie has just 4 ingredients and is simple to make. Known around our house as the best blueberry pie we make this pie as often as we can! This homemade blueberry pie can be made with a store bought crust or a homemade pie crust. I have included direction for how to make a blueberry pie with homemade crust and how to make blueberry pie with store bought crust for you. Both of them taste amazing and use the same blueberry pie filling.
The Best Blueberry Pie
For many years we lived in New Jersey where blueberry you-picks are plentiful. In fact we had one right around the corner from one of the houses we lived in. That is actually one of the biggest things I miss about living in New Jersey.
The kids and I made almost daily trips after breakfast to pick blueberries. It was something the kids loved doing and then they loved enjoying fresh blueberries with their lunch. With young kids it was a great way to get them out of the house and have some fun.
However the downside to them being young was that at times they over picked blueberries from what we would need for lunch and so we had to find things to make with them. Thankfully there are plenty of things to make with blueberries. We of course ended up freezing blueberries often as well so we could use them all year long.

Store Bought or Homemade Crust?
I love making homemade pie crust and much prefer it, however you can use store bought pie crust for this easy blueberry pie recipe.
Depending on the time that I have there are times that I will make a lattice pie crust because I love the way a homemade blueberry pie looks with the lattice pie crust.
For this homemade blueberry pie recipe I use a lattice pie crust, however feel free to use a store bought pie crust or to skip making the lattice crust and place a solid pie crust on top and just use slits to vent the pie while it is baking. The lattice pie crust and a homemade pie crust recipe are the same basic recipe, the difference is how you lay the top pie crust layer on the pie.
Can I make lattice pie crust with refrigerated pie crust?
If you are using a store bought refrigerated pie crust you will use the one crust as the bottom and then you can use the second pie crust dough to make a lattice crust. All you have to do is roll the pie crust dough out into a thin circle then take a ruler and cut 1 inch strips. Use those one inch strips to form the lattice crust.
Should Blueberry pie be left out?
When you are storing this homemade pie you have 2 options. It can be left out at room temperature while covered for 2 days. You can also store this pie in the fridge covered and it will keep for 4-5 days.

How to Make Blueberry Pie From Scratch
Make the blueberry filling, then make the pie crust. Place one pie crust on the bottom of the pie pan. Fill the pie crust with pie filling, top with second pie crust. Brush pie with egg wash, sprinkle with sanding sugar and bake in the oven.
See it is super easy to make a blueberry pie from scratch! It takes a bit of time, but it is so worth it!
How to Make Blueberry pie filling
In a large bowl mix the flour and sugar.
Add the blueberries and mix well so that all of the blueberries are coated in the flour and sugar mixture.
Set aside until you are ready to fill the pie crust.
How to Make Homemade Lattice Pie Crust
If you are using a refrigerated pie crust then you can skip this step.
In a large bowl whisk together the flour, sugar and salt.
With a pastry cutter or your fingers work the butter and flour mixture together until it looks like small pebbles.
Add the water little by little and mix with your hands until the dough comes together.
Divide the dough into two equal balls and press flat onto plastic wrap.
Chill the dough for at lease an hour.
Assembling Blueberry Pie with Homemade Crust
For the bottom pie crust, Lightly flour your working surface and roll out your dough, turn it a few inches after a few rolls to achieve a round shape. If it starts to stick add a little extra flour.
It should be a little larger than your pie plate. Roll the dough around your rolling pin to easily place the dough into the pan.
Using a pairing knife or kitchen shears to trim the dough to a one inch over hang.
Fold the dough under and seal to for an edge. Using your finger tips and knuckles crimp the edges.
After you have placed the pie crust into the pie pan, pour the blueberry pie filling into the crust and set the pie aside.
Next take the second ball of pie crust and . Lightly flour your working surface and roll out the second half of your dough, turn it a few inches after a few rolls to achieve a round shape.
If it starts to stick add a little extra flour. It should be a little larger than your pie plate.
Pour the pie filling into the pie crust in the pie dish.
Assembling Blueberry Pie with Store bought crust
Roll out one pie crust in the bottom of your pie pan. Fold the dough under and seal to for an edge. Using your finger tips and knuckles crimp the edges
Fill the pie crust with the pie filling.
How to Form Lattice Pie Crust
Take your ruler and cut the second pie crust dough, either homemade or store bought into one inch strips with a pizza wheel.
Make the egg wash by mixing 1 egg and 1 teaspoon of water with a whisk.
Brush the edges of the pie crust that is in the pan with the egg wash (you won’t use all of the egg wash on this part).
Lay out five of the crust strips across the top of the pie leaving gaps.
Pull Back the 2nd and 4th strip and lay one strip vertical. Than place the strips back in place.
Pull Back the 1st, 3rd and 5th strip and lay one strip vertical. Than place the strips back in place.
Pull Back the 2nd and 4th strip and lay one strip vertical. Than place the strips back in place.
Pull Back the 1st, 3rd and 5th strip and lay one strip vertical. Than place the strips back in place.
Fold the dough that is hanging over the edge under and seal to for a edge.
Using your finger tips and knuckles crimp the edges
After you have made the pie, brush the crust with the remaining egg wash and sprinkle the top with sanding sugar.
Once you have completed the crust, bake the pie for 30-40 minutes until the edges are a golden brown.
Remove the pie from the oven and let cool for 30 minutes.

Lattice Pie Crust Ingredients
- 2 1/2 cups all purpose flours
- 1 teaspoon sugar
- 1/4 cup all purpose flour for rolling out the pie dough
- 1 teaspoons salt
- 1 cup of butter cut into 16 tablespoon sized pieces
- 1/4 cup to 1/2 cup ice water
Egg Wash Ingredients
- 1 egg
- 1 teaspoon water

- Make the egg wash by mixing 1 egg and 1 teaspoon of water with a whisk.
- Brush the edges of the pie crust that is in the pan with the egg wash (you won't use all of the egg wash on this part).
How to Form Lattice Pie Crust
- Preheat the oven to 500 degrees before starting to make the top lattice pie crust and place an empty metal baking sheet in the oven.
- Lay out five of the crust strips across the top of the pie leaving one inch gaps.
- Pull Back the 2nd and 4th strip and lay one strip vertical. Than place the strips back in place.
- Pull Back the 1st, 3rd and 5th strip and lay one strip vertical. Than place the strips back in place.
- Pull Back the 2nd and 4th strip and lay one strip vertical. Than place the strips back in place.
- Pull Back the 1st, 3rd and 5th strip and lay one strip vertical. Than place the strips back in place.
- Fold the dough that is hanging over the edge under and seal to for a edge.
- Using your finger tips and knuckles crimp the edges
- After you have made the pie, brush the crust with the remaining egg wash and sprinkle the top with sanding sugar.
- Once you have completed the crust top, Cover the pie with tin foil and place the pie on the hot baking sheet in the oven then reduce the temperature to 425 degrees. Bake until the top crust is golden brown, this should take 20-25 minutes.
- Remove the tin foil once the top is golden brown, rotate the baking sheet, and turn the temperature down to 375 degrees. Bake another 30-35 minutes, until the top crust is a deep golden brown. If at any time the top starts getting to dark put tin foil back on top of the pie.
- Remove the pie from the oven and let cool for 30 minutes.
