If you do not want to use a rotisserie chicken, you can use boneless skinless chicken breast, thighs, or leftover chicken. If you are using fresh chicken, you must cook it before making the casserole.

- Use an Instant Pot. Place the rack inside the Instant pot and pour one cup of water. Place the chicken on top of the rack, add a chicken bouillon cube, and set to start. I usually make 6 chicken breasts at a time. Check to make sure the chicken has reached 165 degrees before using.
- Boil chicken. Add raw chicken breasts to a pot and cover with 3 cups of chicken broth or water whichever you prefer. Heat on medium-high heat and bring to a boil. Once boiling, turn the heat to low and cover the pot with a lid, and let simmer for 10 minutes.
- Bake chicken. Spray a baking sheet with nonstick spray. Place the chicken breast on the baking sheet and drizzle with olive oil. Then bake for 35-45 minutes until the chicken is fully cooked.

- ¾ cup low sodium chicken broth
- 1 teaspoon minced garlic
- ⅓ cup + 1 tablespoons Buffalo sauce, divided
- ½ cup mozzarella cheese, shredded
- ½ cup mild cheddar cheese, shredded
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 cups rotisserie chicken, shredded
- 2 tablespoons green onions, chopped
How to Make Buffalo Chicken Pasta
Bring a large pot of water to a rolling boil. Add about a tablespoon of oil and 1/2 teaspoon of salt to the boiling water.
Carefully add the pasta to the boiling water, stirring gently to prevent sticking. Follow the cooking time on the package directions.
Once the pasta is cooked, use a colander or strainer and drain the pasta to remove all the water. Set the drained pasta aside.
Heat a large skillet over low heat and combine the cream cheese and chicken broth.
