We pick a day when everyone has time and make large batches of breakfast sandwiches, pancakes, and waffles to have in the freezer so breakfasts are easy for everyone. We end up with a full assembly line in my house with some kids cooking while others are putting sandwiches together and others are wrapping them up so they can go in the freezer.

For this recipe when making it I made oven baked scrambled eggs but you can also use sheet pan scrambled eggs, sheet pan fried eggs or cook eggs to your liking on the stove in a skillet and use scrambled eggs or a fried egg. If you plan on making these sandwiches ahead of time and then freezing them I suggest using one of the sheet pan egg recipes as they hold up best when frozen.
Change up the Cheese. I used American cheese for this recipe but you can use just about any sliced cheese. Cheddar cheese, Colby Jack, Pepper Jack, Provolone are all great options for cheese.
Change up the bagel flavor. Whenever we make bagel sandwiches I get the bagels from our local bagel shop and everyone in my house likes them made with everything bagels but you can use whole wheat bagels, plain bagels, garlic bagels, onion bagels, egg bagels or any other savory bagel when making bagel breakfast sandwiches. You can use store bought bagels as well.

Ham, egg and Swiss cheese bagel breakfast sandwich. Thinly sliced ham with Swiss cheese and egg cooked your preferred way.
Canadian Bacon, Havarti cheese and Egg sandwich. Canadian bacon with creamy Havarti cheese and a fried egg is another great one. You can also use scrambled eggs or over easy eggs for this one.

How to Store Bagel Breakfast Sandwiches in the Freezer
Assemble the breakfast sandwiches and then allow the assembled sandwiches to cool completely to room temperature. This step is crucial to prevent condensation, which can lead to sogginess.
Once cooled, Wrap each sandwich tightly in plastic wrap and then a layer of aluminum foil. Make sure there are no gaps to prevent freezer burn.

On the bottom half of the bagel place the egg.
Then layer the bacon on top of the egg.
Next, add the slice of cheese.
Place the top of the bagel on top of the cheese.
Once you have assembled them all wrap them for the freezer or serve.
