I thought as my kids got older that life would get easier and less busy but I was totally wrong about that. Life has gotten busier and busier with schedules that are no longer the same as the kids have gotten older.
The schedules in the house for everyone don’t match up to anyone making breakfast for everyone in the morning so we have been doing a lot of meal prep to load the freezer up with quick and easy breakfast foods.
We pick a day when everyone has time and make large batches of breakfast sandwiches, pancakes, and waffles to have in the freezer so breakfasts are easy for everyone. We end up with a full assembly line in my house with some kids cooking while others are putting sandwiches together and others are wrapping them up so they can go in the freezer.
This sausage Egg and Cheese breakfast sandwich recipe is one of the kid’s favorites. This recipe makes 6 breakfast sandwiches but you can easily double or triple the recipe to stock up your freezer.

Variations of this Recipe
Change up the Eggs. You can cook the eggs by your preferred method on the stove, or if you are making a large batch of breakfast sandwiches then you can use the sheet pan eggs, muffin tin eggs, oven baked scrambled eggs or sheet pan scrambled eggs recipe to make the eggs.
Change up the Cheese. I use American cheese most of the time but you can also use cheddar cheese, pepper jack or any other type of cheese that you like on your breakfast sandwich. I do not suggest using shredded cheese as it is harder to keep on the sandwiches, but you can use it if you want to.
Toast the English Muffins. If you are serving them right away toasting the english muffin makes for a great breakfast sandwich. I do not toast them before I freeze them if I am making breakfast sandwiches for the freezer.
Add vegetables. You can add veggies to the sandwiches if you want to. Fried onions or bell peppers are great additions when you are serving them as soon as you make them. I do not suggest adding vegetables to them if you are going to be putting them in the freezer.
Change up the Sausage. I use ground country breakfast sausage so that it has all of the seasonings already but you can use any ground sausage and season it how you like it. You can also use frozen breakfast sausage patties instead of fresh ground pork sausage if you want to cut down on prep time. You do not need to heat the frozen sausage patties before putting them on the sandwiches if you are going to be putting them in the freezer, if you are going to enjoy them right away then you will want to cook the frozen breakfast sausage before adding it to the sandwiches.
How to Store Breakfast Sandwiches in the Fridge
You can premake the breakfast sandwiches and wrap them in plastic wrap and keep them in the fridge or you can store the eggs and sausage in airtight containers to make the sandwiches quickly in the morning. Breakfast sandwiches can be stored in the refrigerator for 3-4 days.
How to Freeze Homemade Breakfast Sandwiches
Wrap each sandwich tightly in plastic wrap and then wrap it with a layer of aluminum foil. Place the wrapped sandwiches on a baking sheet in a single layer. Put the baking sheet in the freezer for about 1-2 hours. This helps them freeze quickly and maintain shape. Transfer the frozen sandwiches into a freezer-safe bag or container. Label with the date and contents.

- Cook the eggs for your preference in yolk. If you prefer runny yolks when eating a breakfast sandwich cook them a shorter time than if you prefer them cooked all the way.
- Add sauces when you are going to eat them. It is best to add sauces like ketchup or hot sauce on the breakfast sandwich when you are going to eat them not before freezing them.

How to Make Sausage Egg and Cheese Breakfast Sandwich Recipe

While the eggs are cooking cook the sausage. Shape the sausage into 6 patties. Cook the patties in a nonstick skillet on the stove over medium heat.
Once your sausage patties are done and the eggs allow them to cool for a bit.
Next, it is time to assemble them.
Split the English muffin in half and place the bottom half down with the inside facing up.
On the bottom piece of your English muffin put your egg, then a sausage patty, then the slice of cheese, and put the top of the English muffin on.
Once you have assembled them all wrap them for the freezer or serve.
