Oven Baked Eggs In a Muffin Tin Recipe
I love cooking eggs in the oven. When I need a simple way to cook eggs for a crowd or on a busy morning instead of standing in front of the stove I cook them in the oven. There are a few different ways including sheet pan eggs and oven baked scrambled eggs. This muffin tin baked eggs recipe is another one of my go to ways to cook eggs.
This super simple, no fail egg recipe is not only easy to make but the clean up is super easy too. If you are a mom like me then you know that clean up being easy is a must on a busy morning.
Most of the time I use these muffin tin eggs when I am doing meal prep and making breakfast sandwiches to stock the freezer but there are many other ways to enjoy them as well. If you are cooking for a crowd you can cook a large amount of eggs easily.
The texture of the egg when baked until the yolk is solid is the same as hardboiled eggs so they are also perfect for using in recipes like egg salad, pasta salad, potato salad and on top of salads.

What are Muffin Tin Baked Eggs?
Muffin tin eggs are a super simple, no-fail way to make eggs and you can cook the egg yolks to a hardboiled yolk texture, or softboiled yolk texture of as scrambled eggs.
You can use muffin tin eggs when making breakfast sandwiches, and I find they are the perfect size for using when making english muffin breakfast sandwiches.
You can also use these eggs in recipes like homemade egg salad or potato salad since they have the texture of a hardboiled egg when you cook them until the yolk is solid.
How to Serve Muffin Tin Eggs
While I mainly use whole-eggs muffin tin eggs as the egg in my breakfast sandwiches there are many other options for serving and using them as well.
On Their Own. Serve the muffin tin eggs warm as a quick and easy breakfast option. They are a great addition to a weekday breakfast or a brunch get-together. You can include muffin tin eggs as part of a larger brunch spread with dishes like pancakes, waffles, sausages, and roasted vegetables.
In a Breakfast Sandwich. Place a muffin tin egg between a toasted English muffin, bagel, or croissant, and add a slice of cheese and/or bacon for a tasty breakfast sandwich.
On a Salad. Slice the muffin tin eggs and place them on top of a fresh garden salad with your favorite dressing.
In a Wrap. Wrap a muffin tin egg in a whole grain tortilla with some veggies and cheese for a quick and easy lunch.
Avocado Toast. Mash an avocado and spread it on a piece of toast made with your favorite bread. Then chop the egg and put the cooked egg on top of the mashed avocado.
Use in Recipes that you use Hardboiled eggs. Peeling hardboiled eggs is always a pain, if you cook oven baked muffin tin eggs until the yolk is solid then you have the same texture as hardboiled eggs making them perfect for using in pasta salads, egg salad and on top of salads.
Can I scramble the Eggs before baking?
Yes! You can use this cooking method to make scrambled eggs. I suggest if doing so that you scramble all of the eggs in a large bowl and then pour them into the muffin tin. You can scramble the eggs in the muffin tin cups but I find it easier to use a bowl.
Variations of this Recipe
Scramble the eggs. If you want to scramble the eggs and bake them, you can. Just make sure the egg whites and the egg yolks are fully mixed together for the scrambled egg texture. You can mix the eggs in the muffin tin, but I find when making a large batch it is easiest to crack all the eggs into a large bowl and then mix well with a whisk and then pour the mixed eggs into the muffin tin.
Add veggies. You can add veggies to the eggs when cooking them, I find it works best if you finely chop the vegetables. If you are not scrambling the eggs I suggest adding them on top of the eggs after adding them to the muffin tin. If you are scrambling the eggs add the veggies into the mixed egg mixture. Add an extra 5 minutes to the baking time if adding in vegetables. Some of the best vegetables to add are mushrooms, bell peppers, tomatoes, spinach, and onion.
Add Cheese. Add a sprinkle of shredded cheese on top of the eggs before placing them in the oven. Cheddar cheese is a great option, but you can also use any of your favorite types of cheese that you
Add meat. Just like adding veggies adding meat is a great variation. Bacon, ham, and sausage are my family’s favorite add ins. You want to cook the meat before adding it to the eggs and be sure to chop them finely. Then add them on top of the eggs before baking them. If you are making scrambled eggs in the muffin tins then you will want to add the meat to the scrambled egg mixture before pouring it into the muffin tin. Add an extra 5 minutes to the baking time if you are adding in meat.
How to Store Muffin Tin Eggs
Allow the eggs to cool completely and place in an airtight container. Store the cooked eggs in the fridge for up to 5 days. Reheat in the microwave or oven before serving.
Can you Freeze Muffin tin eggs?
You can freeze these eggs, which is why they are great for using when making breakfast sandwiches for your freezer.
To freeze the muffin tin eggs allow them to cool completely. Then place the eggs on a baking sheet and place them in the freezer. Once fully frozen remove from the baking sheet and place into a freezer bag or an airtight container and store them in the freezer. To reheat the eggs, wrap them in a damp paper towel and place them on a microwave-safe place. Heat in the microwave for 1.5-2 minutes until fully warmed through.

How to make Muffin Tin Eggs
Preheat oven to 350.
In a muffin tin spray each muffin spot with non stick cooking spray.
Crack an egg into each of the muffin tin spots.
Sprinkle with a pinch of salt and a pinch of black pepper if desired.
Bake in the oven for 10 minutes and check the eggs – if you want a runny yolk remove the eggs now as long as the whites of the eggs are cooked through. If you want a harder cooked yolk cook for an additional 3-5 minutes until the yolk is your desired consistency.
Remove the muffin tin from the oven.
Use a knife to slide around the egg’s edges and gently remove from the muffin tin.
