The casserole version of chicken cordon bleu is much easier to make. Made with simple ingredients, chicken, ham, swiss cheese, and a creamy dijon sauce combine to make a delicious casserole that the whole family will love. It makes the perfect easy weeknight dinner.
Do I have to use chicken breasts for this recipe?
I am making this casserole with chicken breast. It is the meat we prefer since Chicken Cordon Bleu is usually made with chicken breast. However, you don’t have to only use chicken breast. You can use chicken thighs for chicken cordon bleu casserole that are skinless and boneless. You can also use leftover shredded chicken.
Can I Use Different Cheese in Chicken Cordon Bleu Casserole
Using Swiss cheese is traditional because that is what is used for chicken cordon bleu. That is because of the flavor and it retains its shape and stays on the chicken. Since this is a casserole and the shape of the cheese doesn’t matter, you can use whatever kind of melting cheese you like. Cheddar will pair well with the ham but it is a much stronger flavor than Swiss.
What to serve with Chicken Cordon Bleu Casserole
Salad. Salad is perfect to serve as a side dish for this casserole. We love making Olive Garden Salad, BLT Salad, and Strawberry Spinach Salad but any green salad will make a great side dish.
Vegetables. If you are not putting veggies into the casserole you can also serve vegetables like oven baked broccoli, roasted asparagus, Lemon Roasted Asparagus, oven roasted carrots, Roasted Cauliflower, and Roasted Brussel Sprouts are all great options.
Rice or pasta. There is not rice or pasta in this casserole so you can make is as a side dish. Some of our favorites are Garlic Butter Rice, Parmesan Rice and Oven Baked Rice. Buttered noodles is also a great side dish option!
Can I prep this recipe in advance?
You can totally make this recipe in advance and then pop it in the oven to bake when it is time for dinner. You can also freeze this casserole and have this easy chicken casserole as a freezer meal ready to go in the freezer for busy weeks.
Tips for making this recipe
Use leftover ham. If you have ham left over from making a ham then you can use that in place of deli ham. If you have a ham steak you can dice that up and use it in place of deli ham.
You can skip baking the panko breadcrumbs in the oven, I like the extra crisp they get when prebaking them but you can skip this step if you are running short on time.
How to Tell When the Chicken is Done
The chicken needs to reach an internal temperature of 165 degrees to be considered safe to eat. I like to use a meat thermometer to make sure it is done and at temperature. If you do not have a meat thermometer, you can check to see if the juices run clear when you pierce the chicken with a knife.
How to Store Leftovers
You want to store the leftovers in an airtight container. Wait until it has cooled completely and then store it in the refrigerator. The chicken casserole will last for about 5 days.
The chicken cordon bleu casserole can also be stored in the freezer. Once the food has cooled, move it to an airtight container or freezer bag and press it flat. Write the name and date on the bag and place it in the freezer. It will last for up to 3 months.
To thaw, move the bag or container to the refrigerator.
How to Reheat Chicken Cordon Bleu Casserole
Place the casserole back in the oven until it is heated through. The other option is to reheat the chicken in the microwave. You can add it to a pot or skillet and reheat it on the stove.
Chicken Cordon Bleu Casserole Recipe Ingredients
- 2 chicken breasts, cut in half
- sliced deli ham, 8 slices
- Sliced Swiss cheese – 8 slices
- 2 tablespoons Dijon mustard
- 2 tablespoons Mayonnaise
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Fresh Parsley, optional
Casserole Topping
- 2 cups panko bread crumbs
- 6 tablespoons butter, melted
Dijon Mustard Sauce Ingredients
- 4 tablespoons flour
- 4 tablespoons butter
- 2-3 tablespoons mustard (use more for a bigger kick)
- 2 cups milk or (1 1/2 cup milk and 1/2 cup chicken broth)
- salt to taste
- pepper to taste
- 1/4 teaspoon cayenne pepper optional
How to make Chicken Cordon Bleu Casserole
Preheat the oven to 350°F degrees and spray a 9 x 13 baking dish with nonstick cooking spray.
Spread the panko breadcrumbs on a baking sheet and place in the oven for 10-12 minutes stirring occasionally till golden. Set aside to cool.
While the breadcrumbs are in the oven make the sauce.
How to Make Dijon Mustard Sauce
In a sauce pot over medium heat add the butter and cook until melted.
Once the butter is fully melted, add the flour and whisk quickly. The mixture will be thick and bubbly.
Once it thins out, you can stop whisking. Let cook for 3 minutes stirring occasionally. Add the mustard, milk, salt, pepper, and cayenne and mix well. Let cook for 2-3 minutes. Set aside and let cool.
Assemble the Casserole
Slice each individual chicken breast in half length wise so you have 2 thin pieces of chicken from each chicken breast.
Place the chicken breast halves in the casserole dish in a single layer
Mix mustard, mayo, salt, pepper, paprika, and garlic, divide evenly (1 tablespoon per chicken), and spread on top of the chicken.
Layer two slices of ham over each piece of chicken, and pour 1 cup of sauce over the ham and chicken.
Then add 2 slices of Swiss cheese on top of each piece of chicken.
In a medium bowl add the 6 tablespoons of butter and melt in the microwave. (30 – 45 seconds in the microwave)
Add the panko breadcrumbs to the melted butter and mix well. Spread the panko bread crumbs on top of the casserole.
Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165 degrees.
Reheat remaining sauce to serve with casserole; optional. Thin with water or chicken stock according to preference. I like to add another cup or two of water to make it a lot thinner and easier to pour as a sauce.
