Avocado Pasta Recipe

Toss tomatoes in the oven to roast, cook the pasta till al dente, put the avocado pasta sauce ingredients in the blender or food processor, and blend them, then mix the sauce with the pasta.

Ingredients

– 3-4 vine ripe tomatoes or a pint of cherry tomatoes – 4 tablespoons olive oil – 1 box of fettuccine noodles – 2 ripe avocados seed and skin removed – 2 garlic cloves peeled – 1/2 teaspoon salt – 2 tablespoon lemon juice – grated fresh Parmesan cheese – salt to taste – pepper to taste

Preheat the oven to 350 degrees. Slice your tomatoes in half and toss them with 2 tablespoons olive oil. Place them on a parchment lined sheet pan and bake for 30 minutes.

While the tomatoes are cooking, put a pot of water on the stove and bring to a boil. Once you put the pasta in the boiling water cook to Al Dante.
