I have to tell you I am loving the Grinch this year. Ok maybe I don’t need to tell you because you are seeing all the tasty grinch treats we are making and sharing. But for those who don’t visit often, this year is the year of Grinch treats.
We have a lot of Christmas cookies and treats that are Christmas themed already so this year I wanted to make it even more fun and add lots of easy to make, fun and tasty Grinch themed treats to the Christmas recipes we already have. I hope you are loving them as much as I am!
This one up next is Grinch Cookie bites. Sugar Cookie cups that are baked in the oven and then filled with cheesecake filling (colored bright green of course to be like the grinch) and then topped with red heart sprinkles. I am sure if the Grinch took a bite of these sugar cookie cups, his heart would grow three sizes!

What are Cookie Cups?
Cookie cups are cookies in bite sized form that are filled with a tasty filling. The cookie dough is baked in a mini muffin tin to make the cookie cups and then filled with a filling. For this cookie cups recipe, we have used sugar cookies and filled the sugar cookie cups with a vanilla cheesecake filling.
Can I use homemade sugar Cookie dough?
Yes! You can totally use homemade sugar cookie dough, I just wanted this recipe to be super simple so I went with one of the store bought mixes.
You could also use the premade cookie dough in the refrigerator section of the grocery store.
Do I have to color it green?
No. I colored the cheesecake filling green because I wanted them to be Grinch themed, however you can make these as a tasty treat for any holiday by changing up the food coloring you use or leaving it out completely.
How to Store Cookie Cups
Because these cookie cups have a cream cheese filling, they need to be stored in an air tight container in the fridge.
Grinch Cheesecake Cookie Bites Ingredients
- One (17.5 ounce) pouch sugar cookie mix
- ½ cup butter, softened
- 1 egg
- Holiday sprinkles
- 8 ounce block softened cream cheese
- Large package vanilla instant pudding, 5.1 oz
- 2 cups milk
- Neon Green Food Coloring
- Green sugar sprinkles
- Heart sprinkles
How to make Stuffed Grinch Cheesecake Cookie Bites
Preheat oven to 350 degrees.
Lightly grease a 24 cup mini muffin tin and remove the cream cheese from the fridge to bring to room temperature.
In a bowl mix your sugar cookie dough, butter, and egg until combined.
Add in 1 tablespoon holiday sprinkles.
Roll the dough into balls.
Place one dough ball in each muffin cup and use your fingers to spread the dough up the sides to form a cup.
Bake until lightly browned 10-12 minutes.
Remove cookie cups from the oven and while still hot use a spoon or little shot glass to press down the middle of the cookie cups, reforming the cup shape.
Let cool the cookie cups cool completely.
While the cookie cups are cooling, make the cheesecake filling.
In your stand mixer add the cream cheese and whip the cream cheese until fluffy.
In a separate bowl mix the pudding mix and 2 cups of milk.
Add the pudding mixture to the stand mixer bowl and whip together the cream cheese mixture and the pudding mixture.
Add the neon green food coloring until the desired grinch green color.
Spoon the cheesecake filling into a ziploc bag or into a pastry bag. Cut off the tip of the bag.
Fill cookie cups with cheesecake filling.
Then sprinkle with holiday sprinkles.
