Homemade marshmallows are one of my favorite homemade treats. This homemade marshmallow recipe takes homemade marshmallows up a notch and makes them festive by making them Grinch colored! They are pillowy soft, and the perfect green color. Perfect for adding to a cup of hot chocolate but tasty enough to just eat them as a snack.
My whole family loves it when I make a homemade marshmallow recipe. If you have never had a homemade marshmallow then you are in for a real treat. Homemade marshmallows blow store bought marshmallows out of the water. They are more flavorful and so much softer. There really is not anything better than eating a homemade marshmallow.

How to Use Homemade Marshmallows
S’mores. This homemade marshmallow recipe is perfect for making the best S’mores ever.
Chocolate Dipped Marshmallows. Using a double boiler to melt chocolate dip these homemade marshmallows in melted chocolate and allow the chocolate to harden.
Give as a gift. Make some homemade marshmallows and pair them with hot chocolate bombs, hot chocolate truffles or hot chocolate on a stick for an awesome homemade tasty gift idea.
Homemade treats. We use homemade marshmallows when we make our homemade chocolate covered marshmallow eggs. They also make for an amazing sweet treat just because they are so good!
Shaped Marshmallows. You can pipe the marshmallow mixture into shapes using a piping bag if you want to. You can also pour the marshmallow mixture into silicone molds to make shapes.
With hot chocolate. Add these homemade marshmallows on top of your favorite hot drinks including hot cocoa, slow cooker hot chocolate, pink hot chocolate, and hot chocolate boards.
Chocolate Drizzled Marshmallows. You can make chocolate drizzled marshmallows with different toppings or make hot chocolate pops with them.
Tips for Making Homemade Marshmallows
Avoid sticking to utensils. Always use nonstick cooking spray, cooking oil, shortening, or butter on the utensils you are going to be using to avoid them from sticking to the marshmallow mixture.
Don’t rush the setting processes. You will need at least 2 hours for the marshmallows to set before you cut into them. If you check on them and they are still sticky at the 2 hour point, let them sit longer before dredging them in powdered sugar.
Prep ahead of time. You will need a baking sheet lined with parchment paper for the marshmallows to set, to make things easier prep the baking sheet before you get started.
You can’t over mix the marshmallow mixture. It will feel like it’s never going to thicken and then it all of a sudden will be thick, so stick with it.
It’s imperative that the syrup mixture reaches the hard ball stage for this recipe to work. If not, it won’t set up properly.
Don’t forego the cornstarch. If you only use powdered sugar, it will just sink into the marshmallows and they will remain sticky on the sides. The cornstarch levels out the weaker side of the powdered sugar to keep it from sinking into the marshmallows and making them gooey.
What Equipment do you need to make homemade Marshmallows?
Electric Mixer. To make homemade marshmallows you are going to need an electric mixer, my personal favorite is my KitchenAid Mixer. Seriously I can not survive in the kitchen without mine!
Baking sheet, 8×8 pan or 9×9 pan. Depending on how thick you want to make the marshmallows will determine the pan that you use. You are going to also need to have some good sheet pans. You don’t want to have crappy pans ever in the kitchen because they will end up needing to be replaced. Personally, I love my Calphalon Nonstick Bakeware set.
You are also going to need a small sauce pan. If you are looking for an amazing cooking set, I have the Calphalon Premier Space Saving Nonstick Set and I have never loved a cooking set more than this one.
Rubber spatula. For mixing and scraping the bowl and spreading the marshmallow mixture in the pan and on the side of the pan.
What is the best type of pan to use when making homemade marshmallows?
This recipe works best with a metal or glass dish. The marshmallows should pop right out of the pan if it was thoroughly dusted. Other materials still worked, but not as smoothly and I like to make things as easy as possible.
How to Change the Flavor of Homemade Marshmallows
I normally stick with vanilla flavored marshmallows, but you can make just about any flavor marshmallow that you want. Instead of using 1 tablespoon of vanilla extract just change it out for 1 tablespoon of any other extract flavor.
You can totally make these into peppermint marshmallows that would be perfect for the holiday season.
How to Store Homemade Marshmallows
Once you have made your marshmallows, toss them in a little bit of extra powdered sugar. Then store them in an airtight container and store them at room temperature. Homemade marshmallows will keep for up to 3 weeks in an airtight container. Never put homemade marshmallows in the fridge or freezer, if you do they will fully harden, and then as you thaw them they will melt. I also find it best to add extra confectioners sugar in the container to keep them from sticking to each other.
How long do homemade marshmallows last?
Since this is an egg-less marshmallow recipe there is a long shelf life on these marshmallows as long as they are stored properly.

- 2 cups Powdered Sugar
- 1 Cup Cold Water, divided
- ½ Cup Light Corn Syrup
- ½ White Granulated Sugar
- ¼ Cup Cornstarch
- ½ Ounce Unflavored Gelatin (2 packets)
- 1 Teaspoon Clear Vanilla
- ¼ Teaspoon Sea Salt
- Neon Green Gel Food Dye
- Large Red Heart Sprinkles (optional)

How to Make Grinch Marshmallows
Place the gelatin along with half of the water, in a small dish and slightly stir. Do this quickly. Set aside.
Spray your pan with nonstick spray and coat it entirely with a mixture of powdered sugar and cornstarch.
Place the corn syrup, sugar, salt, and remaining water in a saucepan and heat over the stove on a medium setting. You want to reach 240 degrees and this will take between 10-15 minutes. This is the hard ball stage, which means if a drop of the liquid were placed in cold water, it would ball up and sink to the bottom.
Immediately transfer the liquid into a medium mixing bowl, along with the gelatin mixture and a bit of the neon green gel dye. Use the hand mixer to beat the mixture until thick, like milky, melted marshmallows. This will take about 5-7 minutes.
Add in more dye as you go along to get the desired color.
Pour the marshmallow mixture into the prepared pan and spread even. Tap on the counter to level.
Leave the mixture to set in a cool, dry area for at least 4 hours or until solidified like a marshmallow.
Turn out the marshmallows onto a flat surface covered in a mixture of powdered sugar and cornstarch. Cover the entire square with the mixture as well.
Cut into ½-inch squares or into larger squares, depending on your preference.
Top with a red heart sprinkle, if desired, and enjoy!
