Fluffy and creamy mashed potatoes with cheese and bacon baked inside the skin of a potato is one of the best ways to enjoy potatoes. I like making baked potatoes because it is easy. When I have a bit more time I like to fancy them up and make twice these because they are even better!
This easy potato recipe is sure to be a hit with everyone in your house. It is the perfect way to change up the normal in your house and have an easy tasty side dish that goes with so many main dish recipe!

When I make potatoes as a side dish I like to balance things out and have veggies as our other sides. There are times I will make baked mac and cheese, but that is not often as I prefer to have a balance of starch and veggies.

How to Store Leftovers
If you have left overs you can place them in an airtight container and store in the fridge. They will keep in the fridge for 4-5 days.
How to Reheat
If you have leftovers that you want to reheat, preheat the oven to 400°F. Place the potatoes on a greased baking sheet and heat for 20 minutes until they are fully reheated.
Can I freeze Twice baked potatoes?
To freeze twice baked potatoes complete all of the steps of the recipe up until the second bake time. Instead of baking the wrap each potato in tin foil.
To cook frozen twice baked potatoes, remove from the tin foil and place in a baking dish, bake in the oven at 400 for 45-50 minute. Add additional cheese on top if desired and then bake for another 15 minutes until the potatoes are hot and the cheese is bubbly.

- 4 medium potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/4 cup butter, melted
- 2 cups shredded cheddar cheese, divided
- 1/2 cup sour cream
- 6 strips of bacon, cooked, crumbled, and divided
- 1 tablespoon chives, chopped
How to Make Twice baked potatoes
Preheat oven to 400°F.
Wash and dry your potatoes then pierce the skin multiple times with the ends of the fork to help prevent it from exploding. Rub each potato with olive oil and then sprinkle them with the salt.
Bake the potatoes for about one hour until you can stick a fork in easily to the flesh of the potato.
Cut each potato and half and scoop out the potato leaving about a quarter inch around the edge. Set the insides of the potatoes to the side. Brush the potatoes with the butter.
Mix the inside of the potatoes, half the cheese, sour cream, and 2/3 of the bacon together until the mixture is smooth. Divide this mixture back inside of the potato skins.
Sprinkle each potato with the remaining cheese.
Bake for 10 minutes until the cheese is melted.
Sprinkle each potato with the remaining bacon and chives.
