I love all things about the Samoa Girl Scout cookies, I love it even more that I found the copy cat version at Aldi so I can have them all the time. The combination of caramel, chocolate and coconut is perfect!

Chocolate and Coconut Dessert Recipes
Making Pudding from scratch
The best thing about this recipe is the homemade pudding. If you have never made homemade pudding before then you are in for a real treat. It is super easy to make but it tastes so much better then the store bought or the instant pudding mixes.
Cool pudding completely. When you are making homemade pudding it is important to let the pudding cool completely in the fridge before serving or using in parfaits.
Don’t stir to hard. When you are making the pudding you will need to stir it, however you want to be gentle when you are stirring it.
Don’t Over cook the pudding. When the pudding is on the stove, once it starts to bubble you will cook it for only 1-2 minutes longer and then it is done. It is also important to keep the stove temperature at medium heat, if the temperature is to high the milk and sugar will burn.
Cover with plastic wrap while cooling. When you are cooling the pudding it is important to cover it with plastic wrap so it does not form a skin on the top.
Add dry ingredients first. When you are adding the pudding ingredients to then pan add the dry ingredients first then whisk in the milk.

- Samoa cookies – If you can not find Girl Scout Samoa cookies then you can also use Benton’s Caramel Coconut Fudge Cookies found at Aldi, Clover Valley Coconut Fudge and Caramel Cookies or Keebler Fudge Stripes Cookies, Coconut Dreams cookies.
- Toasted coconut
How to Make Samoa Pudding Parfaits
Make the chocolate pudding and allow to cool completely in the fridge.
While the chocolate pudding is cooling, make the coconut pudding.
Allow the coconut pudding to cool.
While the coconut pudding is cooling, toast the coconut.
Chop the cookies.
Put a layer of chocolate pudding, then the chopped cookies and then the coconut pudding.
Sprinkle toasted coconut on top and then top with a cookie.
Drizzle with Caramel and Chocolate Syrup if desired.

Ingredients

- 16 Samoa cookies
- 1 cup Toasted coconut
Chocolate pudding Ingredients
- 2 cups milk
- 1/3 cup cocoa powder
- 1/2 cup sugar
- 3 tablespoons corn starch
- 1/4 teaspoon salt
- 1 egg
- 1 egg yolk
- 1 tablespoons butter
- 1 teaspoon vanilla extract
Coconut pudding Ingredients
- 2 cups milk
- 3/4 cup sugar
- 3 tablespoons corn starch
- 1/4 teaspoon salt
- 1 egg
- 1 egg yolk
- 1 tablespoons butter
- 1 teaspoon coconut extract
- 1 teaspoon vanilla extract

How to Make Homemade Chocolate Pudding
- In a large saucepan combine the milk, cocoa powder, sugar, corn starch, salt, egg, and egg yolk together over medium heat. Whisk continuously while cooking until the mixture has thickened.Once the mixture has started to bubble cook for 1-2 minutes and the pudding is done cooking.
- Remove the pan from the heat and stir in the butter and vanilla extract.
- Pour pudding into a glass bowl and place in the fridge for 30 minutes.
How to Make Coconut Pudding
- In a large saucepan combine the milk, sugar, corn starch, salt, egg, and egg yolk together over medium heat. Whisk continuously while cooking until the mixture has thickened.Once the mixture has started to bubble cook for 1-2 minutes and the pudding is done cooking.
- Remove the pan from the heat and stir in the butter and coconut and vanilla extracts.
- Pour the pudding into a bowl and place in in the fridge. Allow the coconut pudding to cool for 30 minutes.
- While the pudding is cooling toast the coconut.
How to Toast Coconut
- Heat the oven to 350 degrees.
- Place your coconut in a baking pan that has sides.
- Stir the coconut ever few minutes until golden brown, this should take about 5 – 10 minutes.
- Remove the coconut from the oven.
How to Assemble Samoa Pudding Parfaits
- When both puddings are cooled get your serving dishes or mason jars. If you want to store the parfaits for later using a mason jar is perfect because they have the lids.
- Place the 1/4 cup of chocolate pudding in the bottom of each mason jar. Then a bunch of the crumbled cookies into each mission jar or serving dish. Top the cookie crumbles with 1/4 cup of the coconut pudding.
- Then top with the toasted coconut and add a cookie to the top of each parfait.Drizzle with Caramel and chocolate syrup if desired.
