With the warm weather soon to be coming upon us I am totally dreaming of grilling steaks, and having burgers on the grill and all the tasty side dishes that go along with it.
Oh and shorts, I am totally dreaming of wearing shorts because I am over the winter cold and having to wear a parka every time I leave the house. What better way to start thinking about the warm weather then to start making and sharing easy summer recipes like this healthy cucumber salad recipe.
In the summer months I like to have fun with the kids, I like to spend as much time as we can out doors and finding things to do. Which doesn’t leave much time for standing in the kitchen cooking so I like quick and easy summer time recipes like this asian cucumber salad.

What to serve with Cucumber Salad
During the summer months, I like to make a few different summer salads including veggie salads, fruit salad, pasta salad and potato salad in advanced. We make a few of them and then keep them in the fridge so we can have easy dinners.
Come dinner time, I can toss some hot dogs, steaks, pork chop, bratwurst, chicken, sausage or burgers on the grill and grab the bowls of salads out of the fridge and dinner is done.

Asian Cucumber Salad Ingredients
- English cucumber
- rice wine vinegar
- sugar
- toasted sesame seeds
- salt
- red pepper flake
How to make Asian Cucumber Salad
Wash and slice the english cucumber into thin cucumber slices and set the cucumber slices to the side.
In a medium size bowl mix the rice wine vinegar, sugar, toasted sesame seeds, salt and red pepper flakes.
Mix everything together well so all of the ingredients are mixed well.
Once mixed, add the cucumber slices to the bowl and stir well so all of the cucumber slices are well coated.
If serving soon, place the bowl in the fridge and store for 1 hour. If you are going to serve the following day pour all of the cucumber salad ingredients into a container with an air tight lid on tightly.
