Peanut Butter Chaffle
One of the things that is normally a no go in anyway shape or form when you are eating low carb is a peanut butter and jelly sandwich. Bread is a no go and most jellies are a no go. Thanya who is an awesome helper here told me that she was missing peanut butter and jelly sandwiches.
She told me that and then I started wanting a peanut butter and jelly sandwich. I stayed away from the temptation of making one and got to work creating an amazing peanut butter chaffle that would work perfectly as part of a peanut butter and jelly sandwich.
What is a Chaffle?
Simply put a chaffle is a waffle made with egg and cheese. Now from the basic chaffle recipe you can make MANY different varieties of chaffles just changing up the type of cheese that you use.
You can also change up the flavors by adding different things to the basic chaffle recipe. There are seriously endless possibilities when making keto chaffles.

What do you cook a chaffle in?
I cook my chaffles in the mini Dash Waffle maker because it is cute, tiny and makes the perfect size for me chaffles. If you want to use a regular sized waffle maker you can.
The difference is that with a mini waffle maker this recipe will make 2 chaffles, a regular sized waffle maker it will make 1 keto chaffle. You can use both sized waffle makers, I just really love my mini one because it is so dang cute!

What to Serve with a Peanut Butter Chaffle?
You can serve this chaffle a few different ways and have a delicious chaffle. You can top it with homemade keto whipped cream, confectioners sugar or just enjoy it by itself. However, my favorite way to enjoy it is as a peanut butter sandwich!
Keto Peanut Butter and Jelly Sandwich
I made my Keto Peanut Butter and Jelly sandwich using sugar free grape jelly. But I bet this keto peanut butter and jelly would taste amazing with Sugar free Blackberry Jelly or Sugar free Strawberry jelly.
To make a Keto Peanut Butter and Jelly cook your peanut butter chaffles. Then spread a layer of peanut butter on one and jelly on the other. Close them up just like you would a sandwich and enjoy!
Peanut Butter Chaffle Ingredients
- 1 egg
- 1/2 cup mozzarella cheese
- 3 tablespoons swerve granulated
- 2 tbsp peanut butter
How to make Peanut Butter Chaffles
*This recipe will make 1 large waffle or 2 waffles in the dash mini waffle maker.
Heat up your waffle maker.
In a bowl mix the peanut butter, egg, granulated swerve and mozzarella cheese.
Pour half of the chaffle batter into the waffle maker and cook for 4 minutes.
Carefully remove once cooked and place on a plate to cool. The chaffle will be a little flimsy when you remove it but it will stiffen up as it cools.
Next cook your second chaffle and let it set for 2 minutes after you cook it.
