Chicken Quesadilla Chaffle
Tacos are a big part of our meal planning and always have been. Taco night is the easiest night of cooking in our house and with so many different taco options like taco salad, taco soup, taco cups I can change things up and never get bored.
Chicken and Cheese quesadillas were something that I almost always made as a side they are amazing dipped in a bit of sour cream and some salsa.
With the chaffle craze I have been working on coming up with chaffle recipes that are of some of my favorite traditional recipes that are not low carb. For example the cinnamon roll chaffle, the chicken parmasean chaffle, and the chocolate cake chaffle. All of them are delicious low carb alternatives to the higher carb traditional recipes they are based off of.
I made these chicken and cheese quesadilla chaffles with the original intent of them being a hand held taco chaffle. I have the taco shell chaffle that I love, but I wanted something that had more umph to it and chicken cooked inside of it. After making this easy chaffle recipe, I took a bite and it tasted JUST like a chicken quesadilla. I had the rest of the house taste test it too and they all said the same thing. I ended up making everyone chicken quesadilla chaffles for dinner.
What type of Chicken to Use?
So I have been going with making things as easy as possible and have been grabbing rotisserie chickens at the store and using that to make my chicken chaffle recipes. You can use left over baked chicken, crockpot taco chicken meat or bake some chicken to use.
I find it easiest if I am going to be making chaffles a lot during the week to cook a bunch of chicken and then easily shred chicken in my kitchen Aid mixer and then i have it on had on for whenever I need it.
How Do You Make Chaffles Crispy?
When you first remove the chaffle from the waffle maker it is going to be soft and kind of flimsy. The trick is to let it sit for a few minutes. While it sits it firms up a bit and is perfect for using as keto bread or keto toast.
If you are wanting it even crispier then that, you can put it in the toaster for a little bit or in the toaster oven.
What is a Chaffle used for?
The basic chaffle recipe of egg and cheese makes a fantastic substitute for bread. In fact I like it better then my keto bagels and the 90 second keto bread.
From there the possibilities are endless with what you can do with a chaffle. You can make a breakfast chaffle, chaffle sandwich, and even dessert chaffles!

Chicken Taco Chaffle Ingredients
- 1/3 cup cooked, chopped chicken
- 1 egg
- 1/3 cup shredded cheddar jack cheese
- 1/4 tsp homemade taco seasoning
How to Make Chicken Quesadilla Chaffle
Heat up your Dash mini waffle maker.
In a small bowl mix the egg, taco seasoning. Once mixed add in the diced cooked chicken and the cheddar jack cheese.
Add 1/2 of the batter into your mini waffle maker and cook for 4 minutes. If they are still a bit uncooked leave it cooking for another 2 minutes. Then cook the rest of the batter to make a second chaffle.
Dip in salsa, sour cream or enjoy alone.

Made these tonight! They were so good. I make my own homemade chicken taco filling by using a pound of chicken tenders, a packet of taco seasoning and a cup of chicken broth in the crockpot for 6-8 hours. Using this, I eliminated the taco seasoning. The only issue was I had frozen the chicken taco filling, so there was some extra liquid to contend with. I mixed salsa and sour cream for dipping. It was fabulous! Will definitely make again and again!
