I have to admit that I am still loving Chaffles! My recent chaffle recipe is this delicious Cheddar Chicken and Broccoli Chaffle. A simple chaffle recipe made with egg, cheddar cheese, fresh broccoli and shredded chicken.
Cheddar Chicken and Broccoli Chaffle
Chaffles have been my go to and have made my life so much easier lately. As much as I love all the other low carb and keto recipes, right now life is crazy and I need easy peasy.
With 4 kids at home, all of them homeschooled and me working from home crazy doesn’t even tough what some days are like in our house. That is if we are even home for most of the day because lately we have been out and about just about every day with the kids activities.
I have been slacking on posting the new chaffle recipes I have been making lately, but this Cheddar Chicken and Broccoli Chaffle one was a big hit with everyone in the house!
How do I cook a Chaffle?
I have been cooking my chaffles in the Dash mini waffle maker. If you do not have a mini waffle iron you can grab one on amazon. They are awesome and totally budget friendly. The basic chaffle recipe will make 2 chaffles in a mini waffle maker.
You can also use a normal sized waffle maker you make keto chaffle recipes. When using a normal sized waffle maker the basic keto chaffle recipe it will make 1 chaffle.
If you have a lot of people in your house, consider grabbing this waffle maker that will make 4 keto waffles at the same time!

What type of Chicken to Use?
So I have been going with making things as easy as possible and have been grabbing rotisserie chickens at the store and using that to make my chicken chaffle recipes. You can use left over baked chicken, crockpot taco chicken meat or bake some chicken to use.
I find it easiest if I am going to be making chaffles a lot during the week to cook a bunch of chicken and then easily shred chicken in my kitchen Aid mixer and then i have it on had on for whenever I need it.
Cheddar Chicken and Broccoli Chaffles Ingredients
- cooked diced chicken
- fresh broccoli chopped
- shredded Cheddar Jack cheese
- 1 egg
- garlic powder
How to Make Cheddar Chicken and Broccoli Chaffles
Heat up your Dash mini waffle maker.
In a small bowl mix the egg, garlic powder, and cheddar Jack Cheese.
Add the broccoli and chicken and mix well.
Add 1/3 of the batter into your mini waffle maker and cook for 4 minutes. If they are still a bit uncooked leave it cooking for another 2 minutes. Then cook the rest of the batter to make a second chaffle and then cook the third chaffle.
After cooking remove from the pan and let sit for 2 minutes.
Dip in ranch dressing, sour cream or enjoy alone.

When using 1/2 cup of fat free cheddar cheese this recipe is 1 SmartPoint per serving.
