Tips for Making this Recipe
The majority of my stuffed peppers recipes I want my peppers to be on the softer side. However when I make these tuna melt stuffed peppers, I like my peppers to still have their crunch. I really like the crunch that this low carb stuffed peppers recipe has. If you are wanting your peppers to have a bit less of a crunch then you can bake them at 375 degrees for 10 minutes in the oven. Then add the tuna melt filling and the cheese, then place the peppers under the broiler until the cheese is melted.
If you are wanting to have a lower carb count in these low carb stuffed peppers, then you can use green bell peppers. I like to use the orange, yellow and red one because I love the bright colors but green bell peppers have less carbs.
When making these tuna melt low carb stuffed peppers, you can use either tuna in oil or tuna in water, just make sure you drain the liquid well.
You can use this Keto tuna Salad recipe on top of Keto Cheese Chips, in lettuce wraps or just with a spoon. So if you are meal prepping and want to make two recipes at once you can make a double batch of the tuna salad filling and use one batch for these low carb stuffed peppers and another batch for easy tuna salad lettuce wraps.

Made the tuna stuffed peppers last night. Excellent recipe! I added chopped cooked bacon to the mixture and sprinkled the tops with nothing but the bagel seasoning.
