Yes I know, it is not yet summer, but the spring is peeking thru. That means that the hot days where ice cream is a must are on their way too! Hot days are the perfect day to enjoy some ice cream. If you are looking for an amazing summer time treat that uses those Girl Scout cookies you have sitting in the pantry then you are going to love this Cookie Ice Cream Sandwich recipe made with Girl Scout shortbread cookies.
However I have to admit, that hot or cold outside I do love a tasty ice cream treat and so do the kids!
My kids loved these Neapolitan Ice Cream Sandwiches! Neapolitan is the combination of Strawberry, vanilla and chocolate. These tasty strawberry ice cream, in between 2 tasty vanilla shortbread cookies and then dipped in dark chocolate! Oh they are sooo good!
The kids love ice cream sandwiches, I mean really what is there not to love? Delicious ice cream, squeezed between 2 cookies. It is the perfect ice cream treat! And they are such a pretty ice cream treat, with all of the colors! And they taste amazing!
Cookie Ice Cream Sandwiches Ingredients
The great thing about these Cookie Ice Cream Sandwiches is there are only 3 ingredients. Cookies, Ice cream and chocolate.
I used Girl Scout cookies because that is what I had on hand, plus they are an amazing cookie. If you do not have any Girls Scout Cookie shortbread cookies left over, you can totally use a different brand of shortbread cookie. You just want to make sure that one side is flat and round shaped cookies are much easier to make these with then the rectangle ones.
The brand of ice cream you use doesn’t make a difference. Just use your favorite brand of strawberry ice cream. If you want to be adventurous, you can totally make your own strawberry ice cream, however in a house with so many kiddos running around, I don’t normally have the time to make homemade ice cream.
Also if you wanted to use a different flavor ice cream, you totally could. You could make homemade ice cream in a bag, to make it even more fun. And then use that ice cream to make them! If it is winter time and you are making them, you could use Snow Ice Cream.
For the dark chocolate, I like to use Ghirardelli dark chocolate. If you have a preferred dark melting chocolate, then use those.
Ice Cream Sandwiches with Shortbread Cookies Ingredients
- Girl Scout shortbread cookies
- strawberry ice cream
- Melting chocolate
How to make Ice Cream Sandwiches with Shortbread Cookies
Lay out half your cookies on a sheet pan.
Scoop out a tablespoon of ice cream onto each cookie.
Top the ice cream with another cookie. Place the sheet pan in the freezer for 10 minutes.
Melt your chocolate over a double boil.
Remove the sheet pan from the freezer.
Dip half of the ice cream sandwiches into the chocolate, place the sandwiches on a parchment lined sheet pan.
Place them back into the freezer for 5 minutes until the chocolate has set.
Keep the sandwiches in the freezer up to four days.
When you are making these ice cream sandwiches with cookies, you can make them and store them in the freezer for up to 5 days. I do have to admit, that with 6 people in the house they never last all 5 days!

Neapolitan Ice Cream Sandwiches
Ingredients
- 40 Girl Scout shortbread cookies 1 box of shortbread cookies
- 1.5 cups strawberry ice cream
- 8 oz dark chocolate
Instructions
