This low carb Soup is the stove top version of my Crock-pot Bacon Cheddar Cauliflower Soup. Everyone love that soup (because it is totally amazing), however many of you asked for a stove top version. So here it is, Cauliflower Bacon Cheese Soup made on the stove top!
Some people might call this a bacon cauliflower chowder, or you can call it a soup, either way it is totally delish and the whole family will love it!
Low Carb Potato Soup
Ok so I am going to burst your bubble on this one, but there is no such thing as a low carb potato soup. Potatoes are high in carbs and no matter what you do to them there are always going to be a lot of carbs in them.
If you are looking for a low carb alternative to potato soup, then this cauliflower soup is going to be the perfect fit. This Low Carb and Keto Cauliflower Soup recipe is one of our favorites and is on the meal plan often during the chilly months.
Loaded Cauliflower Soup
When I put this recipe together I made it so it was easily customizable. Not everyone loves a ton of bacon, or a ton of cheese so start with the base amount and add as you want to flavor wise.
When it comes to the amount of bacon that you use, totally feel free to use more then I did if you want a heavy bacon flavor.
For some the amount of garlic and onion might be a bit to much, when it comes to carb amounts. Feel free to cut back on the amount. Personally I am not willing to give up my garlic and my onions. I just adjust my carbs for the day. But even with the full amount of onion and garlic there are just 8g of carbs per serving.
What to Serve with Cauliflower Soup
When I make this soup for dinner, I always make a salad to go with it. If the rest of the family is eating it then I will also make a loaf of french bread (or grab one when I am at the grocery store) and they will have that with the soup as well.
My family is not low carb, so I also make some fresh bread or grab a loaf from the store for them to enjoy with their soup.

- Bacon
- Onion
- Garlic
- Chicken broth
- Cauliflower
- Salt
- Cream cheese
- Cheddar cheese
- Scallions
How to Make Cauliflower Soup with Bacon and Cheese
Cook the Bacon in a medium Dutch oven or medium stockpot.
Once the bacon is crispy, place it on a plate lined with paper towels and set aside.Remove all but 1 tablespoon of bacon fat from the pot and sauté your onions in the bacon fat until they turn golden brown.
Add the garlic to the pan and continue to cook for another minute just until the garlic becomes fragrant.
Add your chicken stock to the pan to the glaze the drippings from the bottom of the pot.
Place pieces of the cauliflower into a food processor or blender. Place on chopping mode and make small bits of cauliflower to create rice texture. Repeat this with the whole head of cauliflower. You will end up with about 8 cups of cauliflower.
Add the cauliflower to the pot and stir in the cream cheese, salt, and pepper. Continue to stir until the cream cheese is melted. Cover and turn the heat to medium-low allowing the soup to simmer for 30-45 minutes.
Using an Immersion blender or a stand blender, purée the soup until it’s creamy.
Place the soup back in the pot and stir in the cheese and most of the bacon.
Portion your soup into soup bowls and top with additional cheese, bacon, and scallions.

- 5 strips bacon
- 1 small onion diced
- 6 cloves garlic minced
- 3 cups chicken broth
- 1 large head of cauliflower about 4 cups
- 1 teaspoon salt
- 8 oz cream cheese
- 1/2 cup cheddar cheese shredded
- 2 strips of scallions sliced
