How to Stuff Zucchini Boats
Stuffing zucchini boats is really easy. First you will rinse off your zucchini. Then using a sharp knife, cut your zucchini in half lengthwise. Then you will scoop part of the insides out, I like to use a small cookie scoop because I find it easier to scoop the insides. You do not want to scoop to much of the insides but enough that there is room to put all the tasty fillings. Once scooped out you are ready to get filling the zucchini boats with whatever your recipe calls for.

- Zucchini
- chicken
- bacon
- garlic
- Ranch dressing
- Mexican blend cheese
- Salt
- pepper
How to Make Chicken Bacon Ranch Zucchini Boats
A Few tips for making this recipe.
- You can use any brand of ranch dressing that you like.
- You can use fresh garlic or jarred garlic.
Preheat oven to 400 degrees.
In a medium pot boil your chicken until it reaches an internal temperature of 165 degrees. Remove your chicken from the pot and use two forks to shred the chicken.
In a medium mixing bowl stir together the chicken, bacon, garlic, ranch, salt, and pepper.
Cut your zucchini in half lengthwise. Using a spoon scoop the seeds out of the zucchini to create a well for your filling. Place the zucchini into a 13×9 baking pan.
Fill the zucchini with your chicken mixture.
Sprinkle the tops of the zucchini with cheese and cover the pan with aluminum foil.
Bake for 20 minutes and remove the aluminum foil and continue to bake for another 5 minutes.

- 1 pound chicken breast raw
- 4 medium zucchini
- 3 strips bacon cooked and chopped
- 1 clove garlic minced
- 1/2 cup ranch dressing
- salt and pepper to taste
- 1/2 cup Mexican blend cheese
Instructions

This is a fantastic recipe.. we have some large zucchini’s in our garden so one sliced long way makes a meal for 4. I added the flesh from the zucchini into the chicken mixture. It made it more moist and flavorful. I just diced the flesh and it was perfect!
