These cute little Carrot Marshmallow Pops are sure to get your little bunnies hopping your way. My kids loved it when I made these Carrot Marshmallow Pops as a treat.
A great way to display these pops is to fill up a few small glass with jelly beans then stand them up in the glass. They also sell different stands you can use at your local craft store, but I prefer the jelly beans in a glass jar because I think they look more festive.

Tips for Making this recipe
Melting the chocolate. You can melt the chocolate in the microwave on 30 second intervals or you can melt chocolate in a double boiler. It all depends on personal preference.
Use wax paper. Using a wax paper lined baking sheet make it easy to set the marshmallow pops up after you have dipped them in the melted chocolate and the colored sanding sugar.
Dip while the chocolate is still warm. To get the most sanding sugar on the bottom of the marshmallows you want to dip them in the sanding sugar as soon as you have dipped them in the chocolate.
Prep everything before getting started. Have a tray lined with wax paper ready to go along with the chocolate in a bowl that can easily be dipped into before starting will make your life much easier.
Make sure your bowls are totally dry. It is very important that no water touches the chocolate. Water touching chocolate will totally ruin melting it and being able to use it.
How to Melt chocolate for dipping
There are two different ways to melt the chocolate. I suggest using the microwave way if you have kids making them. It is also important that you Don’t make the chocolate to hot. You want it to be hot enough that it is fully melted, but not so hot that it will melt the marshmallows.
Double Boiler Method. When you are melting chocolate for dipping the best way to do so is with a double boiler. You can buy a double boiler in the store but they are so easy to make at home with items you already have in your kitchen. Melt chocolate in the microwave. You want to use a microwave safe bowl and heat for 30 seconds at a time. In between each 30 seconds stir the chocolate and continue the pattern until the chocolate is melted and smooth.
Carrot Marshmallow Pops Ingredients
- Orange Dipping Chocolate
- Shortening
- Green Dipping Chocolate
- Marshmallows – you want the 10 ounce bag of regular jet-puffed marshmallows
- Lollipop Sticks
Carrot Marshmallow Pops Directions
Melt 12 ounces of Orange chocolate and 1 tablespoon shortening in your double boiler. Pour the chocolate into a tall glass once melted.
Dip the end of your marshmallow stick into the orange chocolate then stick it into the marshmallow. Repeat with all the marshmallows.
Dip the marshmallow into the orange chocolate and tap the extra chocolate off.
Stand the marshmallow upright in a glass, repeat with rest of the marshmallows.
Melt the other 12 ounces of Orange chocolate and 1 tablespoon shortening in your double boiler. Pour the chocolate into a a ziptop bag or pastry bag once melted.
Cut off a very small tip from the bottom corner of the bag if you are using a ziptop bag.
Drizzle the chocolate back and forward over the side of the marshmallows.
Melt your green chocolate and 1 tablespoon shortening in your double boiler and pour the chocolate into a short glass.
Dip the top of each marshmallow in to the green chocolate to form the top of the carrot.
Let the chocolate set for 20 minutes.
