Chocolate covered strawberries get all the attention when it comes to chocolate covered treats, but chocolate covered raspberries are even better. Raspberries and chocolate are my favorite flavor combination ever.
If you are looking for a super treat to make that is also healthy then you are going to want to make these chocolate dipped raspberries. I am going to warn you, they will not last long.
I don’t know that a recipe for chocolate-covered raspberries is actually needed for most people because it is super easy, however the tips and tricks for making them perfect is probably the most important part of this chocolate covered raspberries recipe.

Tips for Making this Recipe
Use good fresh fruit. Making sure you are using fresh ripe fruit is important. You want to make sure none of the berries have mushy spots and they firm.
Dry Fruit. Make sure the raspberries are fully dry. After washing them, use a paper towel too dry them, if they are not fully dried then the chocolate will not stick to them.
Use a quality chocolate. When you are making chocolate covered fruit the most important thing next to to using quality, ripe fruit is the chocolate that you are using.
Melt the chocolate in a double boiler instead of the microwave. You will get a much smoother melted chocolate and not have any clumps in the melted chocolate. If you have never used a double boiler to melt chocolate it is super easy, just follow the steps for how to melt chocolate in a double boiler.
Dip while the chocolate is still warm. To get the most sanding sugar on the bottom of the marshmallows you want to dip them in the sanding sugar as soon as you have dipped them in the chocolate.
Variations of this recipe
If you want sugar free chocolate covered cherries you will want to use a chocolate like Lily’s chocolate chips.
You can use dark chocolate, milk chocolate or white chocolate. My personal favorite is dark chocolate.
You can add a drizzle of a different chocolate then what you use to dip the raspberries if you want to.
I like to dip them individually, but you can also dip them in groups of 2-3 raspberries so you have chocolate covered raspberry clusters.
How to Store Chocolate Covered Fruit
Store in an airtight container in the fridge, and they will keep for a few days. I do suggest enjoying them with in 48 hours for the best flavors as I find they are best eaten sooner rather then later.
Can I freeze chocolate covered raspberries?
Yes you can! They freeze nicely and are great for keeping on hand when you want a healthy sweet treat.
After dipping the raspberries in the chocolate place them on a baking sheet, Then place the baking sheet in the freezer for 10 minutes. Once they are hardened remove from the baking sheet and place in a plastic container with a lid in the freezer.

How to Make Chocolate Covered Raspberries
Line a sheet pan with parchment paper or wax paper. Wash and dry the fresh raspberries.
Chop the chocolate in to chunks.
Melt chocolate over a double boiler and once melted remove the bowl of melted chocolate from the double boiler.
Dip the raspberry about 3/4 of the way up leaving a small lip around the top.
Place them on the sheet pan lined with parchment paper after you dip them.
Once you have all the raspberries dipped place them in the fridge for 30 minutes to harden.
