When you are making this oven baked chicken and potatoes recipe there are quite a few things that you can do to change things up and give the meal a different flavor when you are making it often. Because it is so easy I tend to make it often and change things up but still keeping how easy it is to make.
Changes up the potatoes. One thing that is great about this recipe is you can also change out the potatoes, if you want sweet potatoes, yellow potatoes ect. you can change out the potatoes in this One Pan Baked Chicken and Veggies Dinner to the ones your family enjoys.
Change up the veggies. If you are looking for other vegetables to use carrots, spinach, asparagus, broccoli, cauliflower, green beans, carrots, radishes and zucchini are great options when you want to change things up.

- 3 cups fresh or frozen green beans
- 3 cups red potatoes, quartered
- 4 boneless skinless chicken breasts, large diced
- 3/4 stick butter, cut into pieces
- 2 Italian dressing seasoning packets
How to Make One Pan Chicken and Veggies
Preheat oven to 350 degrees.
Line one side of the pan with green beans.
Line opposite side of pan with the potatoes.
Put the chicken down the middle of the baking dish.
Layout the butter over the tops of the chicken, potatoes and green beans.
Sprinkle the Italian dressing over the entire pan.
Cover with foil.
Bake 1 hour or until the chicken reaches 160 degrees.

I made this today with chunked russet potatoes and sweet potatoes and carrots, frozen green beans, and boneless/skinless chicken thighs cut up. It was so good! My kids thought so too!
