Chicken and Broccoli Alfredo Spaghetti Squash
This Chicken and Broccoli Alfredo Spaghetti Squash is a combination of two things my family love. My Chicken and broccoli Alfredo and spaghetti squash. I wanted to turn one of our favorite meals into a healthier version that was loaded with veggies. This Chicken and Broccoli Alfredo Spaghetti Squash was the perfect meal and everyone loved it!
Spaghetti Squash is amazing because no matter what you are making with it the squash soaks up the flavors and you have an amazing meal. This easy spaghetti squash dish is loaded with flavor from the rich and creamy alfredo sauce, broccoli, and chicken.
When making my Chicken and Broccoli Alfredo Spaghetti Squash I modified my normal alfredo recipe because I wanted to make this be on the healthy end of things!

Tips for Cooking Spaghetti Squash
If you have never cooked spaghetti squash before you might be a bit nervous, but don’t be! Cooking spaghetti Squash is so easy! How to tell spaghetti Squash is ripe
You can tell your spaghetti squash is ripe when it is golden yellow in color or a darkish yellow color. When checking the shell of the spaghetti squash for ripeness, you want to push down on the skin with your nail and have your nail NOT penetrate the skin. You also do not want to have any squishy or soft spots in the squash at all. When buying your squash also make sure it has no cracks or splits in the skin.
How to cut spaghetti Squash
Spaghetti Squash can be very hard to cut because they are very firm vegetables with a hard outer shell. But you can use a few tricks to make cutting spaghetti squash easier. If you can’t get your knife into the shell to cut it heating it in the microwave will make it easier. Using your knife make little dashes all the way around the squash where you are planning to cut it open.
Then place it in the microwave for 5 minutes to soften the outside. Once it comes out you just cut along that line of dashes much easier. You are going to want to cut the spaghetti squash length-wise so that you end up with two long pieces.
Tips for Cooking Chicken
This recipe calls for 2 cups of cooked chicken. There are a few different ways that you can cook chicken. If you are going to shred the chicken, use the shredding chicken trick that makes it super easy!
How to boil chicken breast. Just add raw chicken breasts to a pot and cover with 3 cups of chicken broth or water whichever you prefer. Heat on medium high heat and bring to a boil. Once boiling turn heat to low and cover pot with a lid and let simmer for 10 minutes.
How to bake chicken breast. Spray a baking sheet with non stick spray place the chicken breast on the baking sheet and drizzle with olive oil. Then bake for 35-45 minutes until the chicken is fully cooked.
Use Rotisserie chicken. If you want things easier you can grab a cooked rotisserie chicken at the store or cook one at home.
Chicken and Broccoli Alfredo Spaghetti Squash Ingredients
- 2 whole spaghetti squash
- 4 ounces cream cheese
- 1.5 cups milk
- 4 tablespoons butter
- 1/2 cup parmesan cheese
- 2 cups cooked chicken
- 12 ounce broccoli
- 1 tablespoon garlic powder
- salt, pepper and parsley to taste
How to Make Chicken and Broccoli Alfredo Spaghetti Squash
Preheat oven to 375 degrees.
Cut squash in half and scoop out the seeds with a spoon.
Lay skin side down on a rimmed sheet pan that is lined with aluminum foil.
Bake for 35-40 minutes or until softened. When the squash is cooked Scrape the flesh with a fork to create noodles.
While squash is cooling enough to handle heat broccoli and prep your chicken into bite-sized pieces after baking get a large skillet.
In the skillet heat to medium heat and add cream cheese and butter.
Let melt and stir with a whisk (it will be clumpy), then add in milk and bring to a boil.
Once boiling add garlic powder and parmesan cheese.
Turn the heat down to medium-low and add in chicken and broccoli and stir well.
Then add the squash in and stir so everything is coated well with the sauce.
Let sit on low heat for about 5 minutes to get all the flavors mixed well and the sauce to thicken a little bit.
Add salt and pepper to taste and stir well. then sprinkle parsley on top.
