I like using ground chicken because it is similar to ground beef and i like the texture of it in my lettuce wraps. If you are not a fan of ground chicken then you can use chicken breasts. If you are short on time you can even use a rotisserie chicken.
If you love using your crockpot then you can make the chicken taco meat in the slow cooker and then use that to make these chicken taco wraps.
Not a fan of chicken? You can totally change things up and use ground beef slow cooker taco meat, ground turkey, slow cooker barbacoa or shrimp in place of the ground chicken.

- Chopped onion
- Ground chicken
- Garlic
- Salt
- Pepper
- Chili powder
- Cumin

How to make Chicken Taco Lettuce Wraps
Heat olive oil in a skillet over medium high heat, add onion cook until soften.
Add in the chicken, garlic, salt and pepper. Breaking you the chicken into small pieces until cooked through, about 5 minutes.
Add chili powder, cumin, paprika, tomato paste and chicken broth. Reduce the heat to medium low and cook until the sauce has reduced.
Scoop the mixture into the romaine leaves top with the cheese, tomatoes.

- 3/4 cup chopped onion
- 1 lb ground Chicken breast
- 2 cloves garlic
- 1 Tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/3 cup tomato paste
- 1/2 cup low-sodium chicken broth
- Salt to taste
- ground black pepper to taste
Instructions
