The boxes of pancake mix you buy in the store are nothing more than dry ingredients. When you are cooking pancakes at home with a store-bought mix you are using ingredients that you already probably have at home. Boxed pancakes are quick and easy to use but the pancakes are far from amazing.
The secret is to make your own homemade pancake mix to use when you are making homemade pancakes. And I have to tell you it is just as easy to make your own pancake mix at home as buying a box in the store. Not only will you have better pancakes but it is cheaper to make your own mix. Can I make the Pancake Mix ahead of time?
Yes! If you want to mix the dry ingredients ahead of time and store them for making pancakes later you can. Just mix all of the dry ingredients and store them in an airtight container.
How to Store Homemade Pancake Mix
In a large mixing bowl combine the dry ingredients and mix well with a whisk. Then store the pancake mix in an airtight container. A glass jar or a plastic container with a tight-fitting lid works well. Make sure the container is clean and dry. Pancake mix should be stored in a cool, dry place, away from direct sunlight and moisture. A pantry or cupboard is an ideal location. Eggs: Pancakes and scrambled eggs make a classic breakfast combo. You can serve them on the same plate or as separate dishes. You can also serve them with hardboiled eggs, jammy eggs, poached eggs or sunny side up eggs.
Fruit. Fruit Salad is a great option but you can also serve your favorite fruit cut up. We like bananas, strawberries, blackberries and really any type of fruit as a side dish.

I like to make large batches of pancakes at a time so in the mornings on busy days my kids can just pop them in the microwave and heat them up. You can wrap them up into plastic wrap and make packages with 2-4 pancakes in each one or you can store the pancakes in a large freezer bag and remove them individually.
How to Store Frozen Pancakes Loose in a Freezer Bag
- Let the pancakes cool. After cooking the pancakes, let them cool down to room temperature before freezing. This will prevent them from getting soggy when they are frozen.
- Place pancakes in a single layer on a baking sheet: Place the cooled pancakes in a single layer on a baking sheet or a plate. Make sure that the pancakes are not touching each other.
- Freeze the pancakes. Put the baking sheet or plate with the pancakes in the freezer and let them freeze for about 1-2 hours. This will prevent the pancakes from sticking together when they are stored in a container.
- Store the pancakes. Once the pancakes are frozen, remove them from the baking sheet or plate and transfer them to a freezer-safe container or resealable plastic bag. How to Reheat Frozen Pancakes
To reheat the frozen pancakes, you can use a toaster, microwave, or oven. Toaster and oven methods will give you a crispy texture, while the microwave will make the pancakes softer.
We prefer to heat them in the microwave as we like our pancakes softer. It takes about 45 seconds to 1 minute to reheat the stack of 3-4 pancakes while still wrapped in the plastic wrap. If you are reheating individual pancakes place them on a plate and heat in the microwave for 30 seconds to 1 minute depending on how many you are reheating.

Pour the butter and vanilla extract mixture into the flour and milk mixture and gently mix. DO NOT OVER MIX.
Heat a medium sized skillet over medium heat to heat up the pan or if using a griddle heat griddle to medium heat, then add a small amount of butter or spray the pan with nonstick spray.
Turn the pan down to medium-low heat and pour the pancake batter into the pan. You can make full sized pancakes or silver dollar pancakes.
When the pancake bubbles form around the edges of the pancake, gently flip the pancake over to finish cooking.
