When I need an easy side dish for dinner and tell my kids I am making these easy hassleback potatoes for dinner they all get really excited. They love them and they are so easy to make. Many times I will set up a bunch of different toppings so everyone can customize theirs how they want them.
What are Hassleback potatoes?
Hasselback potatoes are named after the Swedish restaurant where it was first served. These potatoes are very crispy on the outsides but soft on the insides.

Tips for Making Hassleback potatoes
When you are cutting the slices in the potato you can lay a pair of chopsticks or wooden spoons on either side of the potato to prevent the knife from going all the way to the bottom of the potato.
Use a sharp knife. You are cutting the potatoes while they are uncooked so they will be hard, the best knife to use is a paring knife or a chef knife.
Cut the slices about 1/8th of an inch thick. You want each slice to be thick enough that the potato insides get sof while cooking but thin enough that they cook evenly. Try to keep the slices of the potato even.
Variations of this recipe
I make mine simply with olive oil, garlic and salt however you can totally change up the potatoes and add more flavor to them and add fillings inside the potato slices. You will want to add the toppings after they are done baking and then add the potatoes back into the oven for about 5 minutes to heat them.
Cheese. Thinly slice cheese and place between each slice of the potato. Cheddar cheese, Monterey Jack cheese and mozzarella cheese are all great options.
Add toppings. After baking top the potatoes with your favorite potato toppings. Bacon, chives, sour cream, chili and jalapeno peppers are all great choices.

How to Store Leftovers
Allow the potatoes to cool completely before storing in an air tight container. Then store the potatoes in the fridge, they will keep for 3-5 days. To reheat just heat them in the microwave for about 1 minute per potato or in the oven at 350°F for 10 minutes.

- 4 cloves of garlic
- 3 tablespoons of olive oil

Hasselback Potatoes Directions
Preheat the oven to 425˚F
Slice each potato crosswise at 1/8-inch intervals, cutting to within 1/4 inch of the bottom. Be careful not to slice all the way through.
Using a micro plan grate the garlic.
Drizzle the potatoes with the olive oil, making sure you get it in the slits of the potatoes.
Sprinkle them with garlic and salt.
Bake for about 40-45 minutes.
