I love making homemade pie crusts for my homemade pie and quiches, they are so much better than the store-bought pie crusts. When Tom and I first got married it took me a bit when I first started baking and cooking to learn how to get things right in the kitchen. One of the first things I started with was easy things that I was normally buying in the store like pie crust.
I made pie crust originally by hand but wanted to find an easier way to make the pie crust for when my day was too busy for me to spend time doing it by hand. With that came making pie crust in the food processor and while it does mean some more dishes, it cuts down on the prep time a lot when mixing the pie crust ingredients in a food processor.

Why use a food processor to make homemade pie crust?
Flakier crust. I find the processor method of making a pie crust leads to a flakier crust.
Easier to mix pie crust ingredients. All you have to do is add the pie crust ingredients into the food processor and turn it on and pulse the ingredients.
How Many pies can I make with this pie crust recipe?
This pie crust recipe will make enough pie crust for 1 pie crust. If you are making a single pie crust pie you will be able to use this recipe, if a pie recipe calls for 2 crusts, this pie crust recipe will need to be doubled.
How long does the pie crust last?
You can keep the dough in the refrigerator for up to three days or in the freezer for up to 3 months.
How to Store Homemade Pie Crust
Once you have made the pie crust you can store it in the fridge for up to 3 days or in the freezer for up to 3 months.
Can I Make Pie crust ahead of time and Freeze it?
Yes! One of the great things about making homemade pie crusts is that you can make multiple pie crusts, and then freeze them to use when you need them.
I like to do this when I know that I am going to be making multiple pies, it saves me a lot of time when I am making a lot of pies at once. It also makes it much easier for me to have less mess to clean up on the days that I am making pie crust.
How to Freeze Homemade Pie Crust
Make your pie crust following the directions up until rolling the pie crust into a ball.
After rolling each one into a ball, wrap the pie dough tightly with plastic freezer wrap or heavy-duty aluminum foil.
Then place the dough into a heavy-duty freezer bag and zip closed making sure to remove any air from the bag.
You can also freeze the pie crust in the pie pan. I suggest using the tinfoil pie tins if you are going to freeze pie crusts this way.
Follow all of the steps for how to make a pie crust and then shape the pie crust in the tin foil pie pan.
Then wrap the unbaked pie crust tightly with plastic wrap and place it into a heavy-duty freezer bag and zip closed making sure to remove any air from the bag.
How to use Frozen Pie crust made with a Food Processor
If you are using a premed pie crust that you froze in a ball shape defrost it by placing it in the fridge for a few hours. Once it is defrosted roll out the dough and use it as usual.
It will take a few hours to defrost in the fridge, but you do not want to use anything to help it along or you will not end up with a flaky crust.
What is Blind Baking?
Blind baking is when you are baking the crust without the filling. Not all pie recipes call for blind baking but some do. If a recipe calls for blind baking the crust you will want to weigh down the crust with either pie weights or dried beans.
What do you need pie weights for?
Pie weights are used to hold the pie crust down in the pie pan when you are baking it if you are blind baking a pie crust. If you do not have pie weights, you can use dry beans.
How to blind bake flaky pie crust
If you are making a pie that the crust needs to be prebaked, put the pie crust in the pie dish, fill with dried beans and bake at 375°F degrees for 15 minutes, then remove the beans poke the bottom of the pie crust with a fork and bake for an additional 15 minutes.
Tips for making Pie Crust
Do not overwork the dough. This will add extra warmth to the butter that is in it and will make for a runny dough.
Make sure the ingredients are very cold. Using warm ingredients will give you a very unstable crust that will also not bake properly in the oven.
Always roll out the chilled dough on a floured surface. If you do not use a floured surface then you will end up with a doughy mess when it sticks to the surface you are rolling it out on.

Pour 1/4 cup of water into the mixture and pulse until the mixture starts to come together.
You will want to be able to pinch the dough together. If the mixture is still too dry to come together slow add more water.
Pour the dough out of the food processor onto a piece of plastic wrap.
Shape the dough into a disk that is 3/4 inch thick.
Refrigerator for an hour till the dough is firm.
Roll out the dough to 1/4 inches thick if you are using it to make a pie. If you are not using it right away store it properly in the fridge or freezer.
