School is almost here and that means busy schedules for us all, especially in the morning when everyone is getting ready for school and work and things can get super busy. Yes even though we homeschool there are busy mornings here, especially since one of my kids is also doing college classes.Â
These Freezer Canadian Bacon, Egg & Cheese Sandwiches also known as Homemade Egg McMuffins are a great thing to make mornings easier and you can prep them in advance and stock the freezer. Then all the kids have to do is remove them from the freezer, pop them in the microwave to reheat them and they have a tasty breakfast to enjoy.
This Egg & Cheese Breakfast Sandwiches recipe can easily be doubled, tripped or more so you can get a stock of homemade breakfast sandwiches made and into the freezer in no time. We like to make it fun get everyone involved and have an assembly line of sorts to get everything done. It makes things go quicker, but even without a crowd of kids you can get these made and into the freezer quickly.
While this recipe is not an exact copy cat of the beloved fast food breakfast sandwich is is pretty close. Instead of having to cook the eggs on the stove I made muffin tin eggs to save myself time and energy when making this make-ahead breakfast sandwich recipe.

What is in an Egg McMuffin Breakfast Sandwich?
An Egg McMuffin from McDonald’s is a classic breakfast sandwich that includes egg, Canadian Bacon, and American cheese on an English muffin. As much as I love going to McDonald’s to get an egg McMuffin on busy mornings that is not possible. It also is quite pricy and you can make this copycat egg McMuffin recipe at home for a fraction of the cost.
Variations of this Recipe
Change up the Eggs. You can cook the eggs by your preferred method on the stove, or if you are making a large batch of breakfast sandwiches then you can use the sheet pan eggs, muffin tin eggs, oven baked scrambled eggs or sheet pan scrambled eggs recipe to make the eggs. You can also make eggs on the stove in a nonstick skillet and crack the eggs into a mason jar lid and cook the egg, stir the yolk a little bit while the egg is cooking for an even closer version of the egg in the fast food breakfast version.
Change up the Cheese. I use American cheese most of the time but you can also use cheddar cheese, pepper jack or any other type of cheese that you like on your breakfast sandwich. I do not suggest using shredded cheese as it is harder to keep on the sandwiches, but you can use it if you want to.
Toast the English Muffins. If you are serving them right away toasting the English muffin makes for a great breakfast sandwich. I do not toast them before I freeze them if I am making breakfast sandwiches for the freezer.Â
Change up the meat. If you do not have Canadian bacon on hand you can substitute with slices of ham for a similar flavor. You can also use a sausage patty or bacon in place of the Canadian bacon if you prefer.
How to Store Breakfast Sandwiches in the Fridge
You can premake the breakfast sandwiches and wrap them in plastic wrap and keep them in the fridge or you can store the eggs and sausage in airtight containers to make the sandwiches quickly in the morning. Breakfast sandwiches can be stored in the refrigerator for 3-4 days.
How to Freeze Homemade Breakfast Sandwiches
Wrap each sandwich tightly in plastic wrap and then wrap it with a layer of aluminum foil. Place the wrapped sandwiches on a baking sheet in a single layer. Put the baking sheet in the freezer for about 1-2 hours. This helps them freeze quickly and maintain shape. Transfer the frozen sandwiches into a freezer-safe bag or container. Label with the date and contents.
How to Reheat Frozen Egg McMuffin Breakfast Sandwiches
- Microwave: Unwrap the sandwich from foil/plastic. Wrap in a paper towel and microwave for 1-2 minutes, flipping halfway through.
- Oven Method: Preheat oven to 350°F. Place the unwrapped sandwich on a baking sheet. Bake for about 10-15 minutes or until heated through.Â

Preheat the oven to 350.
Use a muffin pan to bake your eggs, and spray the pan with nonstick cooking spray.
Crack one egg into each muffin tin cup.
Bake the eggs in the oven for 40 minutes (check to make sure they are done before taking them out.
While the eggs are baking toast your English muffins in the toaster.
Set the toasted English muffins inside facing up. You can spread a thin layer of butter on the top half if you desire.
Heat the Canadian bacon for 1 minute in the microwave and set aside. If you are putting them right into the freezer, you can skip this step.
Once the eggs are done it is time to assemble them.
On the bottom half of the English muffin place the slice of cheese, then bacon, and lastly the egg, and put the top of the English muffin on.
