How to make Apple Pie from Scratch

While your apples are setting make your homemade pie crust and put the pie crust in the fridge for an hour.
Heat the oven!
Adjust your oven rack to the lowest level of your oven and then heat your oven to 500 degrees Fahrenheit. Place a rimmed baking sheet into the oven on the oven rack.

Pour your apple pie filling into the pie crust.
Place the second pie crust on top of the mixture and using your fingers crimp the sides of the pie crust.
Cut 4-5 vent holes in the top of the pie crust.
In a small bowl add the whites of 1 egg and beat it using a whisk.
Brush the top of the pie with the beaten egg white. Then sprinkle sugar in the raw on top.
Bake your Apple pie!
Place the apple pie in the pie dish on top of the hot rimmed baking sheet. Then reduce the oven temperature to 425 degrees.
Bake until the top of the pie crust is light golden brown, about 25 minutes. Then rotate the baking sheet and turn the oven heat down to 375 degrees.

I would recommend just making the pie dough ahead of time and freezing that in disks. When you want to make the pie thaw your dough in the fridge over night. The next day you can make the pie as normal. Freezing the pie after its baked will leave you with a bad crust. I have never tried to freeze the pie unbaked. So if you try that and it turns out well let me know.

You can freeze apple pie before baking. Make sure you add extra thickening along with sugar and spices. Due to freezing, there will be more liquid as it bakes. Follow baking directions for the recipe you are using. I have always had good luck with this.
