Tender Corned Beef and cabbage, & potatoes (if you want them) that basically cooks itself once you put everything into your crock pot is my perfect dinner. Oh yes please!
This crockpot corned beef and cabbage is always a crowd pleaser and always a mom pleaser with how little there is to clean up after cooking!
If you have not made corned beef before, it is a very easy to make crock pot meal! Just dump all your ingredients into the crockpot and let it cook!
What is corned beef?
Corned Beef is brisket, which has been cured and brined and it comes with a seasoning packet. Makes for a super simple slow crock pot meal. Once cooked this meat is super tender and flavorful! Corned beef and cabbage is an Irish inspired dish!

What to Serve With Corned Beef
When I make this corned beef and cabbage slow cooker recipe I sometimes add potatoes and carrots into the crockpot and let them cook with the cabbage and corned beef. If you want potatoes but do not want to cook them in the slow cooker make mashed potatoes, smashed potatoes, Hasselback potatoes or baked potatoes.

What Condiments are served with Corned Beef?
Traditionally corned beef is served with mustard. We use either spicy brown mustard or yellow mustard.
What to do with left over corned beef?
If you end up with left over corned beef my favorite way to enjoy the leftovers is by making Ruben Sandwiches! If you are wanting to make Rubens you can cook the corned beef the same was as this recipe and just leave out the veggies when you put the meat into the crockpot.
How long does it take to cook Corned Beef in a Crockpot?
It takes roughly 8.5 hours to cook a corned beef in a crockpot. It all depends on the crockpot that you have. I always suggest checking it at the 7 hour mark and planning the 8.5 hour mark to be when we are going to eat. I know this sounds like a super long time, but once you put the meat into the crockpot you don’t have to do anymore work!
It is important to remember that corned beef is a tough cut of meat until it is properly cooked. If it is tough when you think it should be done cooking in your slow cooker, it just hasn’t cooked for long enough. All you have to do is leave it in the crock pot and give it a little more time to cook. Then you will have the most tender and amazing corned beef ever.
If you are wanting to add red potatoes or carrots add them to your slow cooker after it has been cooking for 3 hours. I find they also cook better if you cut them in to 1/4ths.
How do you know Corned Beef is done cooking?
You will want to use a meat thermometer and have the internal temperature reach 160 degrees. At this point the corned beef will be “fork tender”. When you poke a fork into the corned beef it will easily pull apart.

How to Make Slow Cooker Corned beef and cabbage
It is important to remember that to get a tender corned beef you need to cook it slow for the best results.
Prep your crockpot by spraying non stick cooking spray or lining it with a disposable crockpot liner.
Place your corned beef in the crockpot, pour the seasoning packet that comes with it on top of the meat.
Pour enough water to cover the whole piece of meat.
Cook on high for 8.5 hours. If you are adding carrots and potatoes you will want to add them to the crockpot after the meat has cooked for 3 hours.
At the 7 hour mark rinse your cabbage and cut it into wedges. Add the cabbage wedges into the crockpot.
Cook for another hour. At the 8 hour mark check the corned beef and the cabbage to see if it is cooked all the way. You also want to make sure the vegetables are tender. If the meat is not fully cooked and the veggies are still a bit hard, continue cooking for another 30 minutes.
Once it is done cooking remove the beef from the crockpot and allow to cool and set for 5 minutes before cutting. Once cooled and set, slice corned beef into slices.
Remove the veggies in place them in a serving bowl.

Crock Pot Corned Beef And Cabbage
Material
- Crockpot
Ingredients
- 4 pounds corned beef
- 1 large head of cabbage
- 1 pound baby carrots optional
- 2 pounds red potatoes optional
Instructions
- Prep your crockpot by spraying non stick cooking spray or lining it with a disposable crockpot liner.
- Place your corned beef in the crockpot, pour the seasoning packet that comes with it on top of the meat.
- Pour enough water to cover the whole piece of meat. Put the lid on your crockpot and turn it on high.
- If you are adding carrots and potatoes wash and cut them up and set them aside. You will want to add them to the crockpot after the meat has cooked for 3 hours.
- At the 7 hour mark rinse your cabbage and cut it into wedges. Place the wedges into the crockpot and put the lid back on.
- Cook for another hour. At the 8 hour mark check the corned beef and the cabbage to see if it is cooked all the way, if it is not then leave it in for another 30 minutes.
