Tips & Variations for Making this recipe
Timing is Crucial. Be ready with the Kisses as soon as the cookies come out of the oven to press them gently into the center before the cookies start to cool and firm up.
Use a cookie scoop. Making the cookies the same size will make them all bake the same and bake evenly.
Be patient. The Hershey’s Kiss takes quite a while to firm up again after melting on the hot cookie. To speed up this process, you can place the cookies in the refrigerator for approximately 20 minutes. Make sure the Hershey’s Kisses have completely solidified before storing the cookies, or the chocolate will get damaged.
Line the baking sheet. Lining the baking sheet with parchment paper will make it so the cookies do not stick to the baking sheet and will help prevent the cookies from burning.
Add a chocolate drizzle. Melt chocolate and put it in a piping bag and drizzle on top of the cookies after putting the hershey kiss on top.
Make them a thumbprint cookie. Use this recipe and before baking press in the center, then once they are done baking and have cooled, fill the center with chocolate ganache for a chocolate cherry thumbprint cookie.
How to Store Cookies
Let the cookies cool entirely on a wire rack before storing them. Place cooled cookies in airtight containers, separating layers with parchment or wax paper to prevent sticking. These cookies will keep in an airtight container for up to 3 days.
Can I Make the dough in advance?
Yes! You can make the cookie dough in advance and then bake the cookies later. You can make the cookie dough and store it in an airtight container in the fruidge for upto 24 hours. You can also make the dough and then freeze the cookie dough until you are ready to make the cookies.
How to Freeze Cookie Dough
To freeze the cookie dough, make the dough and then roll the dough into individual cookie dough balls. Place the dough balls on a baking sheet and place the baking sheet into the freezer. Once the dough balls are frozen, remove them from the baking sheet and store them in a gallon-sized ziploc bag until you plan on baking the cookies.
Place the frozen cookie dough balls in the fridge on a plate and allow the cookie dough balls to thaw gradually. Once they are defrosted bake as you would if you had made the dough fresh.
How to Freeze Baked Cookies
Allow them to cool completely on a baking rack and then place the cookies on a baking sheet and place in the freezer. Once the cookies are frozen store them in the freezer in an air-tight container or a zip-close bag.
